There are no people who have never tried fried baked goods in their lives. It is known that every person loves to eat tasty food, and pies, especially with potatoes or other fillings, are not only a good snack, but also a complete afternoon snack or dinner.

Calorie content of fried pie

Women who carefully monitor their figure should know the energy value of every dish they eat. For example, the calorie content of a potato pie is 300 kcal per 100 grams of product, which is quite a lot, especially for those who want to lose weight and adhere to proper nutrition. This energy value is average for this dish, and even higher for lovers of fried foods. The calorie content of a pie with fried potatoes is the highest and amounts to 342 kcal.

The energy value may vary depending on the recipe according to which the dish is prepared. When calculating caloric content, not only the filling of the pie is taken into account, but also the dough, which contains flour, eggs, sugar, yeast and other ingredients, which also form energy value indicators.

The method of heat treatment (fried, baked) is also important. After all, everyone knows that fried foods, saturated with vegetable fats, contain more calories than baked ones.

[custom_ads_shortcode1]

Calorie content of baked pie

Unlike fried, baked has a lower energy value, which is determined by significantly less vegetable oil consumption when preparing a baked pie with potatoes. The calorie content of this dish is 300 kcal per 100 grams of product.

But this indicator may vary depending on what kind of dough was used, what the mashed potatoes were seasoned with, whether any additional ingredient was added, and more.

For example, dough made with water has lower calorie content than dough made with milk, and puree seasoned with low-fat milk has a significantly lower energy value than one flavored with butter or heavy cream. Therefore, the calorie content of a potato pie varies within different limits, which can be reduced or increased.

Proteins fats carbohydrates

A cabbage pie, which is quite high in calories, has the following BJU composition (for pies cooked in the oven):

Weight, gProteins, gFats, gCarbohydrates, gKcal
In 1 pie904,47,133,6214,1
In 100 g of pies10058,138,2243,6

For fried pies, the fat content will be higher, which accordingly increases their calorie content.

Calorie content of 1 pie with potatoes

For many people, potato pie is a favorite dish, which is found for breakfast, lunch and even dinner. But what if you are on a diet and watching your figure? Not scary at all. If you know the energy value of 1 pie, then it is possible to calculate the calorie content of the entire diet as a whole and remove some product from it so as not to exceed the calorie allowance per day and allow you to eat your favorite dish. Or you can move more, and the calories you eat will quickly go away.

The calorie content of 1 pie with potatoes, cooked in the oven, is 176 kcal, which, in principle, is not very much. But fried - more than 207 kcal. Here, indicators may also change depending on the use of a particular product, filling methods, adding additional ingredients, etc.

[custom_ads_shortcode3]

Composition in calories of baked and fried pies, percentage of daily value

The calorie content of fried pies will be slightly higher than those baked in the oven.

To prepare both baked and fried pies, the same ingredients are used:

  • water;
  • wheat flour;
  • butter or margarine;
  • yeast (dry or fresh) or kefir;
  • eggs;
  • sugar;
  • salt;
  • cabbage

Lean pies do not contain butter or margarine, which somewhat reduces the calorie content.

Nutritional value 1 pc.

The nutritional value of 1 baked pie weighing approximately 90 g is 214 kcal. The calorie content of a fried pie with the same weight will be about 257 kcal. If we take the daily intake as an average of 2000 kcal, then the percentage of the daily intake of 1 pie baked in the oven is about 11%. For a fried pie with cabbage, this figure will be 12.85%.

Nutritional value per 100 g

The nutritional value of 100 g of baked pies is 243.6 kcal (12.18% of the daily value). The nutritional value of 100 g of fried pies is 286 kcal (14.3% of the daily value). It turns out that by eating 4-5 pieces of both fried and baked pies with cabbage a day, a person receives more than half of his daily calories.

Pie with potatoes and mushrooms: calorie content

Pies with potatoes are a traditional dish, but pies with potato and mushroom filling are also not far behind them. They can also be cooked fried or baked, which will be affected by their energy value. On average, a pie with potatoes and mushrooms has an average calorie content of 242 kcal, which also varies depending on the cooking method. Baked pies of this type have lower energy value than fried ones.

In addition, mushrooms, that is, their heat treatment, affect calorie indicators, since they can be used either raw, boiled or fried. The choice of any of the methods also changes the calorie content of the pie itself. The dough, the main component of this dish, is itself a bakery product and therefore carries a lot of calories, which can be adjusted by replacing some products or reducing their quantity.

The harm of pies with cabbage

Most nutritionists are unanimous in the opinion that any pies, including those with cabbage, are harmful.

In addition to the high calorie content and instant saturation of the body with fast carbohydrates, experts note such negative aspects that arise when consuming this food, such as:

  • lack of nutrients - the patty contains some useful substances, but during cooking most of the important microelements disintegrate, especially if the patties are fried in oil;
  • high cholesterol content – the dough itself is a source of cholesterol, and going through all stages of processing during frying, the content of this harmful substance increases significantly, especially when deep-frying. Eating such foods for a long time leads to the formation of plaques (cholesterol deposits) on the blood vessels and problems with the body’s cardiovascular system;

  • disturbances in the functioning of the gastrointestinal tract - any fresh baked goods are considered difficult to digest food, not to mention pies fried in a frying pan in oil. All baked goods take a long time and are difficult to digest and require significant energy consumption from the body. With frequent consumption of pies with cabbage or other filling, the gastrointestinal tract becomes overloaded and the person suffers from bloating and heaviness in the abdomen;
  • the presence of carcinogens in the composition - this applies to pies fried in a frying pan in a large amount of oil. During such processing, under the influence of high temperatures, special reactions occur that lead to the release of harmful radicals. Excessive consumption of fried foods greatly increases the risk of developing cancer.

Which pie is better: fried or baked?

Not many people will be able to answer this question, since some have not even thought about it. Women who care about their figure, who often had to choose between the first and second option, are more likely to make this choice.

If we divide both pies according to their energy value, then the baked pie, which contains fewer calories, will undoubtedly win, because a large amount of vegetable oil is used during frying, which has a high energy value.

But, if we think in the direction that the calorie content of a product directly depends on the ingredients used in its preparation, then indicators such as energy value can be equal, then the calorie content of a fried potato pie will be approximately equal to a baked one.

Correct usage

You need to eat pies wisely, keeping in mind some rules:

  1. Pies contain a large amount of carbohydrates. During the day, these carbohydrates are digested and spent during your activity. If a large amount of them enters the body after 18 hours (in the form of a pie eaten at night), then they will be converted into adipose tissue.
  2. For the filling, choose fresh natural vegetables or lean meat - chicken or turkey. For sweet pies, low-fat cottage cheese is a good filling option.
  3. The dough tends to stick together and interfere with the passage of food through the intestines. Therefore, after eating the pies, it is advisable to make the next meal light and, if possible, include a liquid dish in it.

Ways to reduce the calorie content of fried and baked pies

Now there are various methods that help reduce the calorie content of any dish, which is very convenient for people who adhere to proper nutrition and are on diets.

Basic methods that can reduce the calorie content of a potato pie:

  1. The use of products with low energy value.
  2. It is better to replace fried pies with baked ones.
  3. Use low-fat dressings for mashed potatoes, they can be: skim milk, low-fat sour cream and other low-calorie ingredients.
  4. When adding an additional product to the filling, take those that have low energy value, for example, cabbage, boiled mushrooms, onions and other ingredients.
  5. Buy or make your own low-calorie dough, and the best and most suitable option is dough made with water. But you should avoid puff pastry, butter dough and milk dough, as these products have high energy value, significantly increasing the calorie content of the potato pie.

How to reduce the calorie content of pies

Premium wheat flour, used in the manufacture of various pies, is poor in valuable elements and, in fact, is a source of empty calories. In addition, such carbohydrates are quickly absorbed and cause obesity. In order not to lose weight under conditions of oppressive prohibitions and deprivations, lovers of pies, who nevertheless monitor their own body weight, should reduce the calorie content of the pies and replace such flour with flour of a lower grade (second grade, etc.).

Low grade flour contains inclusions from grain shells rich in B vitamins and coarse dietary fiber. Due to this, the calorie content of the finished product is reduced, the digestion time is increased, and the glycemic index is reduced. You can also additionally add bran to the flour to enhance this effect. Calorie content of baked pies with cabbage and potatoes.

The potato filling of the pies, which is made on the principle of mashed potatoes, can be replaced with mashed potatoes made from baked or boiled potatoes. It’s a good idea to replace butter with olive oil (you can quickly fry finely chopped onions in it), and use milk with a reduced fat content.

It is also advisable to add chopped herbs to this filling - a source of valuable plant fibers, vitamins and microelements. Similar substitution techniques should be followed when making pies with other types of filling.

Pies baked according to such recipes will be no less tasty, but much more valuable and useful in terms of maintaining normal body weight and health in general.

Recipe for the most dietary pies

The dough will require flour, dry yeast, milk and vegetable oil (it is better to use olive oil). Pour 5 grams of quick yeast into 600 grams of flour, stirring, pour in one and a half glasses of milk and 100 ml of butter. Add 2 tsp to the resulting dough.

l. salt and 1 tsp.

For the filling, you need to boil the potatoes and mash them in water, but make sure that it is not too liquid. If desired, you can add fried onions and salt the filling to taste. When the dough and potatoes are ready, you need to form pies and bake in the oven at 180 degrees for 25 minutes.

The resulting dish contains 130 kcal per 100 grams, which allows you to eat such pies even while on a diet.

Calorie content

The number of calories in a pie is affected by:

  • The composition of the dough and the type of flour from which it is made. White wheat of the highest grade is an order of magnitude higher in calories than oat, buckwheat or wholemeal flour. Adding bran or chopped oatmeal will help reduce calories.
  • Filling. The “champions” in terms of calories are pies with meat, mushrooms, rice and fish.
  • Cooking method. While baked pies still fit well into the diet, fried pies in oil have 1.5 times more calories and are difficult to classify as dietary products.

Let's take a closer look at the calorie content of the most popular pies:

  1. With potatoes: fried 240 kilocalories per piece, and baked - only 150;
  2. With cabbage: baked contains 130 kilocalories, and fried - 220;
  3. With egg and green onions: 150 kcal for baked and 170 kcal for fried.

As you can see, baked pies can easily be eaten at lunchtime or as an afternoon snack. Their carbohydrates have time to be processed and are used by the body to obtain energy.

Despite the late hour, I can’t help but share this delicious recipe. What can I say, GOST is GOST. I baked pies with cabbage, but I’ll copy the entire recipe, maybe it will be useful for someone.

The cutlet meat is washed, cut into pieces and fried in fat, after which the meat is transferred to a deep bowl, broth or water is added (15-20% of the net weight of the meat) and simmered over low heat until cooked. Stewed meat and pre-sautéed onions are ground in a meat grinder. The flour sautéed with fat is diluted with the broth remaining after stewing the meat and boiled. Season the minced meat with the resulting white sauce, add salt, pepper, finely chopped herbs and mix. 2. The second method of preparing minced meat. Raw meat is passed through a meat grinder with two grids. Place the minced meat on a greased deep baking sheet in a layer of no more than 3 cm and, stirring occasionally, fry until done in the oven. Then the juice released from the meat is drained and a white sauce is prepared on it. The fried meat is mixed with sautéed onions and once again passed through a meat grinder with a fine grid. The minced meat is seasoned with white sauce, salt, pepper, finely chopped herbs and mixed. When preparing minced meat with egg, rice or rice and egg, chopped eggs, or crumbly rice porridge, or a mixture of eggs are added to the prepared minced meat.

1091. Pies baked from yeast dough Yeast dough - 1000 g Flour for dusting - 30 g Minced meat No. 1115 - 700 g Fat for greasing sheets - 5 g Melange for greasing pies - 31 g

Yield: 16 - 18 pcs, weighing 100g each

Yeast dough prepared using the sponge method is laid out on a table dusted with flour, a piece weighing 1-1.5 kg is cut from it, rolled into a rope and divided into pieces of the required weight (58, 64, 43 and 22 g, respectively). Then the pieces are formed into balls, allowed to rise for 5-6 minutes and rolled out into round flat cakes 0.5-1 cm thick. Minced meat is placed in the middle of each flat cake and the edges are pinched, giving the pie a “boat”, “crescent”, cylindrical shape etc. The formed pies are placed seam side down on a pastry sheet, previously greased with vegetable oil, for proofing. 5-10 minutes before baking, brush the product with egg. The pies are baked at a temperature of 200-240°C for 8-10 minutes.

As always, I messed around and kneaded the dough thick.

This is how it turned out for me: 115 g of water, 225 g of flour, 23 g of yeast.

Pies according to GOST. The dough turns out to be incredibly tasty, fluffy, soft and does not go stale for a long time - I am sure that everyone will like it, and the recipe has been tested over the years.

Pressed yeast – 20g. (or dry – 7g)

Vegetable oil – 20g.

Pour 350 ml of water into a deep bowl, add 20 grams of raw yeast, 3 tbsp. Sahara. Add 1 tsp. salt, pour in 20 grams of vegetable oil, mix and gradually add sifted flour. Knead the dough until smooth. If necessary, add flour, I used 550 grams of flour, the dough turns out elastic, a little tighter than for donuts. Put it back in the bowl, close the lid and put it in a warm place to ferment for 3-4 hours.

For this we will prepare the filling. 4 hours have passed, we grease the table and hands with oil, we can no longer use flour.

Place the dough on the table and divide it into parts.

We make the balls and cover them with a towel or cling film so that the dough does not dry out.

Take one cone and roll out the flatbread. Place the filling and secure the edges well.

Pour vegetable oil into the frying pan so that the pies are hidden until halfway through frying.

Fry over medium heat until golden brown on both sides.

GOST 31751-2012 Fried bakery products.

Cooks no longer know what crap to post and how to attract it to their channels.

In the book of the USSR (cooking, production, commodity science, I don’t remember the exact names), there are GOSTs for these types of products.

Tell me, do you have any dietary recipes? Or maybe someone has already made a selection?

I really want something special, different from endless chicken breast with the obligatory tomato and cheese. Some tasty, but diet food)

These are just perfect pies that I would like to eat, it’s a pity I don’t know how to cook :-(

If you want to catch a zozhnik, make a post about fried fish, they bite on it better than crucian carp on a worm. Apparently, they like fried food much more than heterosexuals.

“We’ll prepare the filling for that” - something’s missing there, don’t you think?

And GOST is not specified))

And why can’t you continue to use flour?

Because the flour will burn and smoke terribly when fried. For baking norms, for frying it is better not to use flour when making pies.

Oh well, thanks for the answer

Very beautiful pies.

Oh damn. I'm at work, and there's still an hour until lunch.

Thanks for the recipe, I've never kneaded pie dough before. We bought it all the time, store-bought dough is just rubbery. I read it and did it all right the first time! Lush sweet pies with egg and onions turned out super, albeit gigantic in size

I never knew that this was some kind of Gost dough. Life is just full of surprises. And the dough is the best! Suitable for everything, any pies closed in the oven, homemade pizza, pies like TS’s, it always turns out delicious. If you are too lazy to wait, knead it and put it in the refrigerator for 1.5 hours. It will rise just as well, dust it with a little flour and off you go!

How many pies did you get from this amount of dough?

watched the video 19 pies

Just recently there was a post about yet another uninteresting culinary posts with a recipe like “Take water, sugar, you have sweet water”

Ziiiiiiir need more ziiiiiiir

Pour vegetable oil into the frying pan so that the pies are hidden until halfway through frying.

So it’s no longer “frying”, but “cooking” in oil!

Why didn't you like deep frying?

Mmm! Carcinogenic pies! It’s good that in the neighboring posts they write that they have learned to fight cancer ;)

GOST won't recommend shit

-and I liked about 1.42 these fingers are deft in the oil, how they deftly and gently operate. )))

Ingredients of a pie with cabbage

A pie with cabbage, which is quite high in calories, is made from flour dough and cabbage. The dough can be prepared with yeast or kefir. The cabbage is pre-simmered in oil so that it is soft, juicy and crispy. If the pie is fried in a frying pan or deep-fried, then the calorie content of such baking increases. Therefore, it is better to bake the pies in the oven rather than fry them in a frying pan in a lot of oil.

The calorie content of fried pies will be slightly higher than those baked in the oven.

Pies and diet

During the period of weight correction, it is recommended to give preference to baked goods made from yeast-free dough filled with vegetables and a light side dish: of all those presented in the tables, they are the least high in calories. For example, when eating a small pie with cabbage, sorrel, egg and onion, the body will receive about 150-170 kcal - this should be the average snack between lunch and dinner. The BJU indicator in such dishes is close to the norm: the vegetables in the fillings are rich in fiber, vitamins and amino acids. This light, low-fat food is well absorbed by the body and nourishes it.

The heaviest are fried products with meat, mushrooms, fish and rice. You should avoid such dishes during a diet, because the oils and simple carbohydrates in their composition do not saturate the body, but are deposited on the body in the form of fat.

Homemade baking is healthier, so it is recommended to make diet pies yourself. When preparing a dish in this way, it is convenient to control its composition, saturation with proteins, fats and carbohydrates, which is important when losing weight.

Some cooking tips:

It is important to consume pies prepared at home before 16:00, so that by the time you go to bed, the food has time to be digested and properly absorbed. Snacks eaten after this time will create an unpleasant heaviness in the stomach, and later manifest themselves in the form of fatty deposits.

Pirozhki are a traditional Russian dish and an indispensable attribute of the holiday table. Pies can be fried and baked, usually made from yeast dough.

It is believed that the term “pie” (a diminutive of “pie”) comes from the word “feast”. And Rus' has been famous for its feasts since the Middle Ages. A hearty, tasty dish was a symbol of a rich harvest and prosperity.

Properties of pies

Few people write about the benefits of fried foods, because there is nothing to write about. The same is true with pies fried in a large amount of oil.

Properties of pies

Few people write about the benefits of fried foods, because there is nothing to write about. The same is true with pies fried in a large amount of oil. Due to the oxidation of fats, free radicals appear, which provoke the development of atherosclerosis and all kinds of cardiovascular diseases. Carcinogens evaporating from burning oil (heated many times) cause cancer.

Also, excessively fatty fried foods have a detrimental effect on the gastrointestinal tract and well-being in general, causing a feeling of heaviness, and “hits” the liver.

But if you replace frying with baking in the oven, then everything will change dramatically. “Correct” carbohydrates, broken down during the fermentation process, saturate the body with the necessary energy, yeast sticks normalize digestion, forming beneficial microflora in the intestines. Nutrients help increase the body's resistance and immunity. Moreover, baked pies help eliminate carcinogens and toxins. It is an excellent source of calories for children and workers with heavy physical activities. The benefits of baked pies are further enhanced by various fillings: meat, fish, berries, vegetables, herbs, boiled eggs, mushrooms, etc.
