How to make chicken liver pate

Ingredients:

Grate the carrots.

In the meantime, prepare a meat grinder or blender. A meat grinder is more convenient because it chops everything better. And a blender is easier to clean, so you can choose any tool. Let's mince the vegetables and liver.

Add 80-100 g of butter to the still hot pate. At this point, taste for salt - add another pinch if necessary. Then it would be a good idea to turn the mixture through a blender or mixer - then the pate will finally turn into mush and become airy.

Now take a small sheet of foil and lay the pate in a path 5-7 cm wide. You can put narrow strips of butter in the center - like sushi.

Using foil, form a sausage, rolling the butter inside. By the way, you can do without it. But the foil will come in handy - after all, the sausage-shaped pate looks more appetizing.

Place in the refrigerator overnight or for 5-6 hours, after which we take out the sausage and open the foil.

  1. Peel, chop or grate the carrots.

Liver pate recipe

For 8 servings you need:

  • 0.5 kg beef liver;
  • 70 g fresh carrots;
  • 80 g butter;
  • 50 g regular onions;
  • 200 ml cream;

Cooking instructions:

  1. Remove the butter from the refrigerator in advance;
  2. Rinse the liver, remove all excess, cut into pieces;
  3. Fry the liver over medium heat. The main thing is not to overcook, otherwise it will become harsh;
  4. Separately fry the chopped onion; for this recipe, it doesn’t matter how you chop it, just chop it with a blender;
  5. Cut the carrots into any pieces, the only prohibition is that you do not need to grate them, otherwise they will release juice and be dry;
  6. Place all fried foods in a blender, add cream and grind. In conventional recipes, this completes the preparation of the pate. But for gourmet morning breakfasts, this “catering option” is not entirely suitable;
  7. No matter how hard you try, the blender cannot grind everything in the liver. Therefore, you need to take a regular sieve and rub the entire mass with a spoon. Yes, not the easiest operation, but the result is worth it;
  8. Add softened butter, salt and pepper to the pureed mass. Mix well.

Note: a difficult operation in the entire recipe is rubbing through a sieve, but it is this procedure that makes the product airy.
