Classic recipe
Soup with meatballs (the classic recipe includes only a minimum set of ingredients) made from minced meat is rich, nutritious and has a clear broth.
To serve the finished dish, it is advisable to use sour cream.
What ingredients will you need?
The classic list of ingredients for the “first course” with meatballs includes:
- ready minced meat. You can choose any meat (pork, chicken, beef), including a combined one – 500 g;
- potato. It is recommended to use a yellow variety and a moderate size tuber - 4 pcs.;
- turnip onion weighing approximately 120 g;
- carrots weighing up to 100 g;
- butter or sunflower oil (it is recommended to give preference to butter) – 30 g/30 ml;
- table salt – 12-15 g;
- laurel leaf – 2-3 pcs.;
- black pepper. It is recommended to use freshly ground – 1-2 g;
- dill and parsley, fresh or dried - the proportions of greens should be varied according to taste desires.
You will also need 3 liters of filtered water.
Step-by-step cooking process
The process of cooking meatball soup includes the following steps:
- Initially, it is recommended to “blind” the meatballs. To do this, the finished minced meat must be beaten, then the products will not fall apart during cooking. To beat, place a deep dish on the table, lift the minced meat over it and release it about 10-15 times. There is no need to throw the minced meat too hard, as it may scatter outside the dish.
- Then you need to add ground pepper (1/2 part) and about 3-5 g of salt to the minced meat. Mix the ingredients thoroughly.
- Form meatballs from the prepared minced meat and place them on a board or flat dish. To prevent the minced meat from sticking too much to your hands when preparing the meatballs, it is recommended to wet your palms in water.
- Next, you need to place the dish with the prepared water on the burner and wait for it to boil.
- While the water is warming up, you should peel and cut the onion into medium cubes, and also wash and cut the carrots into small strips.
- Prepare butter or sunflower oil in a frying pan.
- First put the onion in the pan, fry it for about 60 seconds over medium heat and add the carrots. Fry the ingredients until the carrots soften.
- When the frying is ready, remove the pan from the heat.
- After this, you need to peel the tuber and cut it into cubes or small cubes with a side of about 1 cm.
- Next, you need to place the sliced tuber and a laurel leaf into boiling water in a bowl. Continue cooking the “first course” with the water bubbling slightly.
- When the potatoes are cooked until softened (but not completely cooked), you need to transfer the frying, meat ingredient and salt (8-10 g of salt) into the pan. Let the broth boil and immediately reduce the heat.
- The “first course” should be cooked with very little bubbling of the broth for about 12-14 minutes.
- Approximately 5 minutes before the end of cooking the “first course”, you need to transfer the herbs and hot spices (the remaining ½ part) into the bowl and check the broth for saltiness.
The finished soup needs to be covered and allowed to “reveal its taste”; for this it takes about 15-20 minutes. Soup with “meat balls” is recommended to be served with sour cream, rye bread and green onions.
