Dukan diet rules
Losing weight with this diet includes 4 stages:
- Attack;
- Alternation (“Cruise”);
- Consolidation;
- Stabilization.
At the same time, Dukan cottage cheese is allowed at any stage. The main thing is to adhere to the basic rules of the diet:
- Taboo on sugar. It is better to switch to natural substitutes for this sweet substance. In this way, you will be able to reduce calories and improve your body’s well-being.
- Use products with 0% fat content. Such products contain more calcium, which, in turn, accelerates the removal of fats and also strengthens human bones.
- Consume 2-3 tablespoons of oat bran per day. They will enrich the body with vitamins and improve intestinal function.
- Avoid animal fats. They negatively affect cardiovascular health because they increase cholesterol levels. To compensate for the lack of fat, it is better to add a couple of drops of vegetable oil to your food.

Spicy cream
250 ml skim milk
200 g skim cottage cheese 1 star anise vanilla bean 1 yolk 1/2 tsp. cinnamon 2 tbsp. sweetener 1 clove
Boil milk with spices. Beat the yolks with sweetener until the mixture turns white. Slowly pour the yolks into the milk, stirring. Cook for 12 minutes over low heat. Filter from spices, add cottage cheese and refrigerate. Serve chilled.
Protein-vegetable days
Recipes for cottage cheese casseroles according to Dukan
Dukan cottage cheese dishes are prepared depending on the stage of the diet using various heat treatment options.
In the oven
Ingredients:
- vanillin;
- 2 tbsp. spoons of corn starch;
- skim milk - 1 glass;
- 600 gr. cottage cheese;
- 8 sweetener tablets;
- 2 chicken eggs.
Preparation:
- Separate egg whites from yolks.
- Grind the yolks together with the cottage cheese.
- Add milk and mix thoroughly.
- Add the remaining ingredients and mix until smooth.
- Beat the whites separately until they form a strong foam. Afterwards, combine them with the curd mass, mixing everything.
- Place the dough in a baking dish previously lined with special paper.
- Cook in the oven at 180°C for an hour.

In a slow cooker
Cottage cheese dishes according to Dukan attack are not prepared in a slow cooker. It is better to make the casserole during the “alternating” period. If desired, add a couple of tablespoons of bran. To distribute the sugar substitute evenly throughout the dough, the tablets should first be crushed.
Ingredients:
- 500 gr. 0% cottage cheese;
- 100 gr. 0% milk;
- 5 eggs;
- Add sweetener and coconut flakes to taste.
Preparation:
- Separate the whites.
- Mix the yolks with other ingredients using a blender.
- Beat the whites in a separate bowl until stiff. Add to the resulting mass.
- Bake for 50 minutes using the “Baking” mode.
Coffee and milk jelly according to Dukan
List of required ingredients:
- 2 tbsp. spoons of ground coffee;
- 1 glass of milk;
- 1 glass of water;
- 3 tbsp. spoons of sweetener;
- 20 grams of gelatin;
- Vanillin (a small amount, literally on the tip of a teaspoon).
Cooking method:
- First, boil the water and cool it to room temperature. Then soak the gelatin. This should be done in cooled boiled water.
- After this, dissolve it until there are no lumps in a water bath. This will be our basis for further actions.
- Milk jelly. Boil the milk, but do not let it simmer for too long. Add half, that is, one and a half tablespoons of sweetener and all the vanillin to the boiling milk. When the milk has cooled, add half the gelatin to it.
- Coffee jelly. First, brew coffee and add the remaining gelatin and one and a half tablespoons of sweetener to it. Let the mixture cool. It is advisable to use natural and freshly ground coffee, but in the absence of other options, bagged coffee is also suitable.
- Then simply pour different types of jelly into the molds one by one, let it harden, and then pour a new layer on top - their thickness and quantity depend only on your desire! Bon appetit!
Curd cupcakes
Recipes from soft cottage cheese according to Dukan allow you to prepare not only casseroles, but also delicious muffins.
Ingredients:
- 2 tablespoons of oat bran;
- 2 sweetener tablets;
- a teaspoon of baking powder;
- egg;
- 200 grams of cottage cheese.
Preparation:
- Grind the tablets for even distribution.
- Mix all ingredients in one bowl until smooth.
- Grease muffin pans with vegetable oil. Spread the curd mixture over them.
- Preheat the oven to 200 degrees. Bake for 20 minutes.
Dukan's curd dessert called "Cheesecake"
For dessert, first bake the crust in a Teflon pan. For it, mix:
- egg - 1 pc.;
- skim milk - 3 tbsp;
- oat bran - 2 tbsp;
- wheat bran - 1 tbsp;
- cocoa powder - 1 tbsp;
- baking powder - 1 tsp;
- sugar substitute - 3 tablets.
Bake the cake covered and turn it over once. When it is ready, set it to cool and make the cream at this time.
- 1 tbsp. gelatin pour skim milk in the amount of 100 ml. Let the gelatin swell, and then heat the mixture in a steam bath, adding vanilla sugar to it.
- Mix 500 g of zero-fat cottage cheese with one raw egg and a sugar substitute (6 tablets).
- Combine milk with gelatin dissolved in it with cottage cheese - stir until smooth.
- Cover a round pan with sides with cling film. Place the cooled cake on it, and put the curd cream on it.
- After the cream has hardened, cut the cheesecake into portions and sprinkle the pieces with cocoa powder.
Dukan cookies
Dukan curd mass can be used to make healthy cookies. To reduce the calorie content, flour is replaced with bran, fat with 0% cottage cheese, and a sweetener is used.
Ingredients:
- a couple of tablespoons of oat bran;
- one egg;
- 200 gr. cottage cheese;
- 1 PC. baking powder.
- flax seeds, a spoonful of lemon zest.
Preparation:
- Prepare the mixture by mixing cottage cheese with eggs.
- Add bran and baking powder.
- While stirring, add flax and lemon zest.
- Leave the resulting dough for 2 hours in a warm place, let it brew.
- Divide the dough into the molds. Bake at 180 degrees for 20 minutes.
Chocolate mousse
125 g low-fat cottage cheese 0% 3 tbsp. l. water 6 proteins 125 g dietary chocolate pinch of salt 1 tsp. instant coffee
In a small bowl, mix water, chocolate pieces and coffee. Melt in a water bath. Mix with cottage cheese and knead until smooth. Beat the whites with salt into a thick foam. Carefully combine with the chocolate mixture, pour into glasses or vases and leave to set in the refrigerator for at least 2 hours.
Curd dessert
Ingredients:
- cottage cheese - 400 gr.;
- gelatin - 15 g;
- low-fat milk - 1 tbsp.;
- sweetener;
- vanillin, cinnamon.
Preparation:
- Prepare gelatin according to package instructions. Mix with milk and sweetener.
- Heat the mixture over heat (do not bring to a boil). Afterwards, set aside to cool.
- Using a blender, beat the cottage cheese, adding vanilla and cinnamon.
- Add the curd soufflé to the cooled milk and gelatin mixture.
- Pour into containers. Place in the refrigerator to set.
With creme brulee flavor
Milk jelly can be given an original “crème brûlée” taste. This is usually done with baked milk or boiled condensed milk. There are several options here. The easiest way to prepare a flavorful dessert is to use classic milk jelly as a basis.
To work you will need:
- 400 g of jelly prepared from milk using any known method;
- chopped nuts;
- 400 g boiled condensed milk.
This delicacy is prepared in stages:
- First, you need to pour some of the classic jelly into the mold. Let it harden a little.
- Cover the jelly with a layer of condensed milk and lightly sprinkle with grated nuts.
- Place the mold in the refrigerator to harden.
- Repeat alternating layers until all ingredients are gone.
After final cooling, the dessert can be transferred to a dish or small portion plates. This aromatic jelly will pleasantly surprise little sweet tooths.
Chocolate meringue (contains 1 acceptable product)
3 egg whites
2 tsp. cocoa 6 tbsp. l. sweetener 2 tbsp.
l. instant coffee Beat the whites into a very thick foam. Gradually add sweetener mixed with cocoa and coffee to the well-whipped foam. Beat for another 30 seconds. Place baking paper on a baking sheet, form the meringue and bake for 20 minutes at 150C.

Peculiarity! If you have sweetener tablets, first dissolve them in a tablespoon of hot water and then add to the dough.

From the liver
Such a tender and delicious meat dish will not leave anyone who loves liver indifferent. Externally, the soufflé looks like a dessert, but it is very filling and very healthy. It's quite simple to prepare.
Ingredients:
- chicken eggs – 2 pcs.;
- onion – 1 pc.;
- chicken liver – 500 g;
- low-fat milk – 100 ml;
- carrots – 1 pc.;
- bran – 4 tbsp. l.;
- salt and spices.
Step 1. Peel and grate the carrots, finely chop the onion, wash the liver and cut off the membranes. Mix these ingredients and mince or grind in a blender.
Step 2. Beat the eggs and add milk to them, salt to taste, sprinkle with spices that you like, add bran to the mixture. Stir everything thoroughly.
Interesting! Spices such as turmeric, marjoram, and suneli hops are great for chicken liver.
Step 3. Mix the minced meat and dough, put everything in molds and place in a preheated oven for half an hour.

- gelatin – 12 g;
- low-fat yogurt – 130 g;
- lemon juice – 2 tsp;
- sweetener.
Step 1. Pour gelatin with water in the proportions indicated on the package. Wait for it to swell. The water should only slightly cover it.
Step 2. Using a blender, turn the cottage cheese into a creamy mass, add yogurt and sugar substitute to it, pour in lemon juice and beat again.
Step 3. Melt the swollen gelatin in the microwave and pour into the mass carefully, slowly. Whisk it while doing this.
Step 4. Place the dessert in the refrigerator and wait until it hardens.
