Cottage cheese pudding in the classic version resembles the casserole beloved by many. Thanks to thorough mixing with the rest of the ingredients, the fermented milk taste in this delicacy is practically inaudible, which is ideal for those who do not really like the taste of such a product.

List of ingredients you will need:

  • half a cup of milk and sugar;
  • 2 cups cottage cheese (the higher the fat content, the better);
  • 3 eggs;
  • creamy spread – 70 g;
  • a pinch of salt;
  • a handful of raisins;
  • semolina grits - 3 tbsp. spoons.

  1. Baked goods made from semolina and cottage cheese are more elastic and do not sag. Pour warm milk over the semolina and leave the cereal to swell.
  2. Separate the whites from the yolks. Beat the yolks with granulated sugar until silky smooth.
  3. Grind the cottage cheese until smooth and combine with the yolk mixture.
  4. Soften the creamy spread until creamy and combine with the infused cereal. Place in parts into a bowl, stirring gently.

The list of required ingredients includes:

  • cottage cheese (fat content 9%) – 400 g;
  • low-fat milk – 100 ml;
  • semolina – 2 tbsp. l.;
  • sugar – 2 tbsp. l.;
  • eggs – 1-2 pcs.;
  • baking powder – 0.5 tsp;
  • vanillin or vanilla sugar - to taste;
  • raisins or dried cranberries, dried apricots, candied fruits - optional;
  • vegetable oil or butter for greasing the pan.

Attention! If you strictly adhere to the rules of a healthy diet, baking powder can be replaced with baking soda, quenched with apple cider vinegar or lemon juice. Moreover, it is better to add these ingredients to the cottage cheese separately so that the slaking process proceeds slowly throughout the entire heat treatment period. Otherwise, it is better to follow the recipe exactly.

The first step is to wash and dry the raisins or other additives. The milk is heated almost to a boil, after which it is mixed with semolina. Stir with a spoon until the milk cools.

In a separate container, grind cottage cheese with sugar and one egg. If the mixture is too thick, add a second egg and stir until smooth. Add semolina swollen in milk, add vanillin or vanilla sugar, baking powder, a little raisins or other additives. All ingredients are thoroughly mixed.

250-300 ml of water is poured into the tray of a multi- or double boiler, and a stand for the dish is placed on top. The prepared curd mass is placed in one or more silicone molds, and then placed on a stand. You can also use metal muffin tins, but in this case you need to grease them thoroughly with oil to prevent the pudding from burning.

The dish is cooked at pressure level “2” for 15-20 minutes. The molds are left inside until completely cooled - during this time the pudding will take on the desired consistency. Then the dessert is removed from the molds, optionally sprinkled with powdered sugar or crushed nuts, and topped with sour cream or yogurt.

This recipe is no longer for strict diets, but just for those occasions when you can treat yourself to a fairly high-calorie, but very appetizing dish. The preparation method is a little more complicated than that of classic pudding, but the result will be completely different - you will get an original, unique dessert with exquisite flavor notes.

For the pudding:

  • cottage cheese (fat content 9%) – 500 g;
  • sour cream (fat content 15%) – 50 ml;
  • butter – 50 g;
  • sugar – 200-250 g;
  • starch – 25 g;
  • eggs – 5 pcs.;
  • baking powder – 0.5 tsp;
  • breadcrumbs - a pinch.

For the glaze:

  • milk (fat content 2.5%) – 35 ml;
  • butter – 50 g;
  • cocoa – 50 g;
  • sugar – 75 g.

The cottage cheese is ground with eggs and sugar. In a separate container, mix softened but not melted butter with sour cream, then add them to the cottage cheese. Add starch and baking powder. You can speed up the process of making the pudding base by blending all the ingredients in a food processor.

The finished mixture is transferred to a large silicone mold and placed on a steamer stand. If you don’t have a silicone mold, you can use a standard attachment for cooking cereals or simply cover the stand with foil, after making several holes in it with a toothpick. Don't forget the breadcrumbs - they will prevent the dish from burning.

Pour 250-300 ml of water into the steamer tray, set the mode to minimum pressure and steam the pudding for at least 45 minutes.

While the dish is cooking, you can start making the glaze. Bring the milk to a boil and dissolve a piece of butter in it. Add cocoa powder and sugar and mix thoroughly.

The finished pudding is removed from the mold and poured with lukewarm glaze. In half an hour it will set and the dish can be served. If desired, it can be decorated with seasonal berries and pieces of fruit, complemented with ice cream or other desserts.

Banana sweetness

Pudding goes perfectly with any fruit. Their pieces can be placed inside the curd mass or on the glaze, or they can even be served as an addition to dessert.

But it’s best to evenly mix the fruit pulp with the cottage cheese - then the whole dish will acquire a rich taste and amazing aroma. Bananas are good because they are soft, not too juicy and very healthy for the body.

To make banana pudding, you need:

  • cottage cheese (fat content 9%) – 400 g;
  • bananas – 2-3 pcs.;
  • sugar – 1-2 tbsp. l.;
  • eggs – 4 pcs.;
  • vanillin or vanilla sugar - to taste;
  • candied fruits - optional;
  • vegetable oil or butter for greasing the pan.


Often the ingredients are mixed “the old fashioned way” - grinding cottage cheese with sugar and eggs, adding vanillin and fork-softened bananas. But it is much more effective to make banana pulp in a blender and mix the remaining pudding components in it. Lastly, candied fruits or other additional products are introduced into the structure of the curd mass.

Attention! The process of steaming banana pudding is not much different from the classic method. Unless the dish has a strong tendency to burn, but this problem is easily solved with the help of oil.

List of ingredients for 400 g of cottage cheese:

  • spread – 40 g;
  • milk – 50 ml;
  • sugar – 50 g;
  • cream – 100 ml;
  • eggs – 2 pcs.;
  • slice of dried white loaf.

Description of the process step by step:

  1. Grind the cottage cheese through a strainer (or grind it through a meat grinder) into a deep bowl.
  2. Beat the egg yolk well with sugar and pour into a bowl. Mix carefully.
  3. Grind the dried loaf into fine crumbs and add to the mixture.
  4. Mix milk with sour cream and softened butter (spread). Add the resulting mixture to the rest of the ingredients.
  5. Beat the egg whites until foamy and place them in a bowl, stirring gently.
  6. Steamed curd pudding is perfectly prepared using a double boiler (you can also use a regular steam bath). Line the bowl with paper and fill it. The dish takes about half an hour to prepare. This dietary recipe can be made richer by serving with cream or condensed milk.

5. Beat the whites with a small pinch of salt with a mixer into a strong and tight white foam.

6. Fold the whipped whites into the curd dough.

7. Gently fold the whites into the mixture. Do this with slow movements in one direction. It is necessary that the proteins retain air and airiness.

8. Take a glass or any other convenient form and cover it with baking parchment, which you first moisten in water. It will be good to line the paper according to the shape of the container. Then pour the curd mass into the mold and smooth it out. Place the bowl in a colander over a pan of water. At the same time, make sure that the water does not come into contact with the sieve. Place such a structure on the stove and boil. Cover the future pudding with a lid and steam for about 10 minutes. If you have a double boiler, then cook the dish in it.

What you will need:

• Bananas (2 ripe fruits) • Granulated sugar (1 tablespoon) • Zero-fat cottage cheese (400 grams) • Eggs (3 pieces) • Butter / vegetable oil (1 tablespoon) • Cinnamon / vanilla and candied fruits to taste.

Preparation:

1. Beat eggs with sugar and cottage cheese. Add spices to taste during the process.

2. When the mass becomes homogeneous, add candied fruits and small banana cubes. Lightly stir everything with a spoon or spatula.

  8. Cover the steamer bowl with a lid, do not forget to pour water into the special compartment so that the steamer works as intended. Now you need to set the operating time to 30 minutes.
  9. At the end of the steaming process, remove the lid from the bowl with a sharp movement to prevent condensation from getting onto the pudding. Carefully turn the bowl onto a dish and cut the curd pudding into portions in a double boiler.

Before serving, it would be nice to decorate each portioned piece of pudding and give it a bright taste. For these purposes, you can use previously grated orange zest. If you have a special device, then the zest can be cut into long spirals - this will make the dish not just aromatic, but also visually attractive. You can also decorate the pudding with lemon slices, grated chocolate, fresh seasonal berries or pieces of fruit. Whipped cream, syrups and jam will go well with the curd base.
