For this roll I offer 3 options for custard and goji berries for decoration. You will need a silicone mat - 25x35 cm in size. The length of the roll is 25 cm. And do not forget that the amount of milk powder in the recipe corresponds to 2 DOPs (products from the list of additional ones).
Ingredients
Biscuit
- oat bran – 4 tbsp. spoons (grind into flour)
- skimmed milk powder (SMP) up to 1.5% - 3 tbsp. spoons
- eggs – 3 whites and 1 yolk
- low-fat soft cottage cheese - 2 tbsp. heaped spoons
- baking powder – 1 teaspoon
- sugar substitute "Fitparad" - 4 measuring spoons
- vanillin
Cream No. 1 (flavor – “boiled condensed milk”) - it’s in the photo!
- skim milk – 180 g
- skimmed milk powder – 3 tbsp. spoons
- 2 yolks
- sugar substitute "Fitparad" - 3 measuring spoons
- "boiled condensed milk" flavoring - if available
Cream No. 2 (taste – “coffee”)
- skim milk – 180 g
- skimmed milk powder – 3 tbsp. spoon

Preparation
Let's start preparing the cream roll. We separate the whites from the yolks. Mix one yolk thoroughly with soft cottage cheese and Fitparad. Pour two yolks into a separate saucepan with a thick bottom - we will cook the cream in it. Fill the goji berries with water for about 20 minutes, let them swell, then place them on a towel and blot them dry.
Preparing the cream. I’ll show you the first option, and I’ll tell you about the second and third at the end of the post. We will need a frying pan with a good, preferably thick bottom. Fry the milk powder on it, stirring constantly so as not to burn. The process is not long, but requires participation, as the milk sticks to the bottom and forms lumps. This is what happens. Remove the pan from the heat.
Add milk (preferably exactly 180 g), sugar substitute to the pan with the yolks, mix thoroughly and sift through the fried milk powder. Rub the lumps through a sieve with a spoon. Place on medium heat and stir vigorously so that the cream does not burn. Cook until boiling. Accuracy is very important here - if the cream burns, you can only throw it away. To play it safe, you can do this in a water bath, or I’ll show you another method below. As a result of cooking on the stove, a very foamy mass of medium thickness is obtained.
You need to let it cool to room temperature - it will thicken. In the meantime, let's move on to the biscuit. Beat the whites until stable peaks form. Add a mixture of yolk and soft cottage cheese. Sift the ground oat bran, 3 tablespoons of dry milk and baking powder. Stir, trying not to let the whites settle. Place the dough on a silicone mat and level it with a spoon, not reaching the edge by 5 mm.
Place in a preheated oven and bake until done. Temperature – 220 degrees approximately. We don't need a very brown crust.
Using a spatula, remove the biscuit, place it on a clean towel and roll it into a tube. Along with a towel - this is important. Let the roll sit, cool, and become soft. If the cream has already cooled down, you can unwrap the sponge cake, transfer it to a cutting board, trim the edges with a knife and grease it liberally with cream.
Let stand for 5 minutes and roll up the roll, not very tightly, so that the cream does not leak out. Grease the top of the roll with the same cream, crush the edges of the sponge cake and use as a topping. Garnish with goji berries and leave to soak in the refrigerator for at least a couple of hours. The cream will still thicken in the refrigerator. And the Dukan sponge roll itself turns out tender and juicy.
The second and third versions of the cream are prepared in the same way, only the milk powder does not need to be fried. And if you have a slow cooker or double boiler, the process of cooking cream becomes much easier. The yolks, milk and all other ingredients of the cream are thoroughly mixed in a suitable container. I pour 300-500 ml of water into the multicooker and place the container.
I close it, set the mode to “cook” (“steam”) and the time for 5 minutes. At the end I stir and the cream is ready. I think a similar thing can be done in a microwave, but I don’t have one, so I can’t tell you what or how.

Dukan chicken gizzards. Chicken dishes for the Dukan diet
The advantage of the Dukan protein diet is that it is ideal for meat lovers. Chicken has a high protein content and a minimal amount of fat, so it is considered a healthy and light product. Dishes from it will please those losing weight, diversifying the strict menu.
Recipes for dishes for the “Attack” phase During the “Attack”, such dishes will form the basis of the diet, and for the remaining stages they will be suitable as “companions” of vegetable snacks.
1. Chicken in the oven on a bed of salt
What you will need:
whole chicken - 1.5 kg; coarse salt - 1 kg.
Wash the gutted chicken, remove excess moisture with a paper towel (do not cut the meat, do not remove the skin). Pour salt onto a baking sheet and place the carcass back down. Bake for an hour in a hot oven at 250 degrees. Then remove, turn the chicken over, remove the skin and cut the bird into portions. Do not remove the skin from the chicken - this will help avoid drying out during baking. Yield of the finished dish is 1.05 kg.

2. Fried fillet (breast)
Ingredients:
chicken breast - 0.7 kg; olive oil - 0.5 tsp; salt, ground black pepper - to taste. Make incisions on the breast with a sharp knife, sprinkle it with salt and pepper (other spices are also suitable - cumin, paprika). Grease a frying pan with oil and fry the meat until golden brown. Turn over, add water until the bottom of the pan is covered, and cover with a lid. Fry until done, add water if necessary. The breast is ready when clear juice comes out when pierced with a knife.
To grease the pan, use a silicone brush - this way you will only need a little oil. Remember that during the “Attack” phase, the use of a herbal product in the amount of one teaspoon per day is allowed.

3. Legs in paprika in the oven (grill)
Dish components:
chicken legs (drumsticks) – 1 kg; paprika - 3 tbsp. l.; olive oil - 1 tsp; salt, ground black pepper - to taste.
Remove the skin from the legs, brush them with a mixture of salt, pepper, paprika and olive oil. Bake in the oven on a wire rack at 200 degrees for 35 minutes. The legs can also be prepared by wrapping them in foil. In this case, do not forget to apply a little olive oil to it first.
The yield of the finished dish is 0.85 kg.

4. Dukan nuggets
To prepare you will need:
chicken breast - 0.5 kg; egg - 1 pc.; skim milk - 100 ml; oat bran - 50 g; salt, ground black pepper - to taste.
Cut the chicken breast into small pieces. Preheat the oven, bring the temperature to 200 degrees. Cover the baking sheet with parchment paper. Beat milk with egg and salt. Dip each piece of breast into the resulting mixture, roll in bran and place on a baking sheet. Bake for half an hour until the surface is golden brown. The yield of the finished dish is 0.598 kg.

5. Broth soup with poached eggs
Ingredients:
chicken meat - 300 g; eggs - 2 pcs.; white wine vinegar - 1 tsp; water - 800 ml; salt, spices - to taste.
Boil the meat in water with salt and spices for 30 minutes, then remove from the broth. Carefully break the eggs into two different cups, making sure that the yolk remains intact. Add vinegar to the broth and boil. Stir to form a funnel and gradually pour the eggs into it. Cook for another 2 minutes. After the specified time has passed, remove the eggs and place on plates. Divide the meat into pieces and add back to the broth. Bring it to a boil, add it to the plates with the egg. Garnish the dish with a pinch of finely chopped herbs.
By adding vegetables to the soup, you can prepare a dish for other stages of the diet in which these products are allowed.

6. Kebabs with vegetables, marinated in kefir
Products:
chicken fillet - 0.8 kg; kefir - 300 ml; garlic - 2-3 cloves; tomatoes - 0.3 kg; eggplants - 0.3 kg; bell pepper - 0.3 kg; onions - 0.3 kg; salt, spices - to taste.
Prepare the marinade: mix kefir with chopped garlic, salt and spices. Cut the fillet into cubes 1.5–2 cm in size, pour in the prepared sauce, and let sit for one hour. Wash the tomatoes, eggplants, onions and peppers, peel and chop into pieces approximately the same size as the fillet. Thread the marinated meat onto wooden skewers, alternating with vegetables. Place the prepared kebabs on a baking sheet or deep frying pan and pour kefir sauce over them for juiciness. Bake for about 40 minutes in the oven at 200 degrees. Serve hot.

Ingredients:
chicken stomachs - 1 kg; onions - 1 pc.; salt, ground black pepper - to taste bay leaf - 2 pcs.; water - 1.5 l.
We clean the stomachs, wash them and place them in the multicooker bowl. Chop the onion and add to the meat. Sprinkle with salt and pepper. Fill with water and close tightly with a lid. In the “Stew” mode, cook for 40 minutes. Before the end of the cycle, open the lid and add the bay leaf.
Stewed chicken gizzards are suitable for all stages of the Dukan diet. By adding a vegetable side dish to them, you will get an inexpensive, nutritious and tasty dish for your daily menu.

Cut the chicken breast into small cubes. Chop the onion and grate the cheese using a coarse grater. Mix the ingredients and leave in the refrigerator for 1 hour. Place a tablespoon into a hot frying pan and fry on both sides until golden brown. The above products make 8–10 cutlets. Serve hot.

We will need:
chicken liver - 0.5 kg; onions - 1 pc.; skim milk - 100 ml; olive oil - 1 tbsp. l.; salt, ground black pepper - to taste.
Cut the peeled onion into strips and the liver into small cubes. Place the meat pieces in a very hot dry frying pan and quickly fry. When the liver cubes become light, reduce the heat. Add oil, quickly fry the onion again until soft, add salt and pepper. Add milk and simmer covered for 10 minutes.
Without adding onions, this dish can be used to include in the Attack phase menu.

If you put the pate on a diet pancake or bread, it will make your breakfast during a diet more satisfying. Two pieces of lean ham, cut into small cubes and added to the main mass, will add piquancy to it.
