Pancakes without flour - 7 recipes for dietary pancakes without wheat flour

One day I wanted to bake pancakes for breakfast. The kefir was stagnant in the refrigerator and needed to be put to use as soon as possible. Moreover, I have long kept my favorite recipe, according to which the baked goods turn out tender and fluffy. I prepared the ingredients and when measuring the weight of the flour, it turned out to be too little to knead the dough.

At first I was upset that I would have to wait at least another day for kefir. But then I remembered that it is not necessary to make the dough with flour. There are also known alternative products that successfully replace it. Instead, semolina or oatmeal is used. With semolina, the pancakes turn out even softer and airier than the usual ones. They are often said to be like fluff. And I agree with this statement.

Today in this article I’ll tell you how to knead the right dough and bake lush products. When I bake them and treat them to my loved ones, they don’t even believe that the dough is without flour. At the same time, they do not fall off after cooling and do not dry out if suddenly they are not eaten all in one meal.

At the end of the article I will share a short video clip that was shot specifically for this article. Perhaps someone will want to look at it instead of reading the recipe. Moreover, the video discusses details that are not conveyed through the description.

Step 2:

Break the eggs and mix with a whisk.

Step 3:

Add semolina and stir well again with a whisk, let stand for 25 minutes under a towel.

Step 4:

Step 5:

Place the mixture on kefir, one tablespoon at a time, at a distance of at least half a centimeter from each other, fry for one minute on each side.

Recipe for diet oatmeal pancakes with blueberries

An easy recipe made from oatmeal, fortified with wild berries – blueberries.

You can also use other berries, for example: raspberries, strawberries, lingonberries, currants. You can add frozen berries or fruits, but first you need to defrost them to room temperature. If you have dried berries, those will work too, but soak them in water first to soften them.

To prepare we will need:

  • Fresh blueberries – 150 gr.
  • Kefir – 200 gr.
  • Egg – 1 pc.
  • Cinnamon – 10 gr.
  • Vegetable oil for frying

There is nothing complicated about this, at first glance, exquisite dish.

1. Beat kefir at room temperature with an egg, add cinnamon, blueberries and mix well.

2. Pour in the flour last. The dough should have the consistency of sour cream.

4. Pour a little vegetable oil into a heated frying pan and bake the pancakes on one side for 3 minutes, turn them over, cover with a lid and bake for another 2-3 minutes.

The pancakes are ready. Enjoy great food. Bon appetit!

Quick recipe for kefir pancakes without flour

If you want something tasty and unusual, then you can use the following recipe for kefir pancakes without flour with the addition of banana.
Moreover, they are prepared instantly, since they also do not contain semolina, which needs to be soaked for swelling. And thanks to the absence of sugar, they are dietary. Ingredients:

  • banana - 1 piece;
  • kefir – 150 ml;
  • 3 eggs;
  • 200 ml sunflower oil.

How to quickly cook kefir pancakes without flour

Step 1:

Peel the banana and grind in a blender until pureed.

Step 2:

Break the eggs into a deep container and beat well using any method.

Step 3:

Add banana puree to the eggs and whisk for three minutes.

Step 4:

Pour in kefir, stir.

Step 5:

Place a small amount into a frying pan in hot oil, fry over low heat, first on one side for one minute, then turn over and fry on the other side for the same time.

Step 6:

When serving, place on serving plates, drizzle with honey if desired, or sprinkle with crushed, lightly fried nuts.

The pancakes will turn out more flavorful if you add a little vanillin to the dough.

Pancakes with semolina and kefir without flour

1. Go to the stove and get ready to fry the pancakes.
Place a frying pan over medium heat and warm its surface. Pour in vegetable oil in a thin layer. Calculate its quantity so that after placing the workpieces in the oil, they end up in it for 1/3 of the product. The oil should also be thoroughly heated. 2. Prepare a tablespoon and a teaspoon. I will make medium-sized pancakes. These do not spread and are better fried inside. Moreover, during frying their volume will increase.

Take a level tablespoon of the mixture and place it in hot oil. Help yourself with a teaspoon. Thus, lay out as many pieces as will fit in the frying pan. There is no need to place them very close to prevent them from sticking together.

3. During frying, oil temperature is very important. When you put the dough in it, it should “respond”, in other words, “crackle”. If there is no response, the dough is laid out, but it just lies like a flat cake, then don’t expect lush baking. Moreover, such products absorb a lot of oil, which means they will fall off after baking.

If the fire is high, then the crust below will quickly fry and you will have to quickly turn the workpieces over. As a result, they will not have time to rise - one, and bake inside - two.

4. Set the heat to a little less than medium. Fry on one side for about 2 minutes. The readiness is checked not only by the brownness of the bottom crust, but also by the fact that bubbles will begin to appear on top and burst. There are not so many of them, but they are an indicator that the process is going on inside and the pancakes will not be raw.

5. When ready, turn the products over using two forks. Turning with a spatula is inconvenient and takes a long time. While you are turning the first ones, the last ones may burn.

6. The second side cooks a little faster than the first. But sometimes the same amount, that is, 1.5-2 minutes. Monitor the heat and, if necessary, adjust the heat by decreasing or increasing the heat level.

7. Remove the finished products using forks and place them on paper towels to rid them of excess oil. Let them lie there for 5-7 minutes. That is, until we are working on the second batch.

8. Similar to the first one, lay out the second batch and the next one. Fry all products.

It happens that one of the subsequent batches requires adding oil. Add it along the edge of the pan so as not to reduce the heat level. You can additionally heat it for a minute.

9. Place the finished pancakes, from which excess oil has drained, into a bowl and serve.

Prepare an additive for them in advance - sour cream, honey or jam. With any of the additives, the pancakes will get more variety in taste. Use powdered sugar for decoration. Serve with slices of banana, apple or other fruits and berries.

If you break or cut one of the delicacies, you can see on the cut how many large and small holes there are. Thanks to them, the dough turns out like fluff. When sour cream or honey gets into them, it makes the baked goods even tastier.

When you press on the product with your fingers, it springs back like a sponge, returning to its original position. Thanks to this, it will not lose its appearance and its pomp will not fall off.

If you don’t eat the pancakes right away, cover them with another bowl and they will be fresh even in the evening. The recipe has been tested for years and does not fail. Try cooking with it.

Another very interesting recipe for kefir pancakes. They turn out indescribably tender and soft, the taste and consistency resemble cottage cheese casserole, and are especially good with sour cream, jam or condensed milk.

  • 20 grams of salt;

  • vanillin – 1 gram;
  • egg – 2;
  • half a glass of sunflower oil.

How to cook kefir pancakes without flour with the addition of cottage cheese

Step 1:

In a deep bowl, mix cottage cheese, kefir, sugar, mix everything well with a spoon. If the cottage cheese is a little dry, you can add a little more kefir than indicated in the recipe.

Step 2:

Add salt, soda, vanillin, mix well again.

Step 3:

Break the eggs, beat for two minutes.

Step 4:

Pour oil into a frying pan and heat it up. Place a small amount of prepared dough at a distance and fry on both sides until light brown.

Step 5:

Place the pancakes in a deep bowl and leave to cool for a while. To make them less greasy, place them on napkins for a while.

Step 6:

Place in flat plates, place two tablespoons of any liquid jam next to them, and garnish with mint leaves.

And to make the pancakes sweeter, it is permissible to add some thick jam, jam or a small amount of honey to the kefir-curd mass.

Video on how to make pancakes without flour

Friends, below I am sharing the recorded video clip. Watch it, it's short. And you can see that the pancakes are made in no time. It is also important to see what consistency the dough turns out to be. How much to scoop into a spoon during laying out. And how the oil “sizzles” when the products are fried in a frying pan.

These are the necessary nuances that affect the result. And unfortunately, no matter how you describe the process, it is better to see once than to hear a hundred times.

I hope you liked the recipe and want to cook it. When I see decent recipes, I won’t rest until I try them. After this, you lose interest in some recipes, while others go hand in hand throughout your life.

This method has taken root with us. We love to cook with it. The consumption of components is small, and the yield of the finished product is convincing. 22 pieces are cool for 250 ml of kefir. Enough for a family of 3-4 people to get enough in the morning.

Cook, try and write your comments. Share your impressions and your recipes. And my story is over for today. See you again!

Keto Zucchini Pancakes with Feta and Herbs, 6 g carbs per serving

A dietary step-by-step recipe for a dish for lunch or dinner with the aroma of greens and a curdled taste. Flourless keto zucchini pancakes are made with chopped almonds and feta cheese.

Feta cheese is a natural product based on sheep's milk with the addition of goat's milk. Does not cause allergies or digestive problems. Contains a large number of useful microelements for beauty and health.

Salty and curdled cheese with sourness is often used in pizza, bread, pies, and added to soups and sauces. The texture is dense but crumbly. It can be combined with any food and melts pleasantly when heated, making it tender and soft. Blends perfectly with Provençal herbs: basil, thyme, thyme, sage, marjoram, peppermint, oregano

.

I recommend sprinkling the finished dish with grated hard cheese or an additional portion of feta cheese until the pancakes have cooled.

When serving zucchini fritters with feta cheese, add pieces of salmon fillet to the dish. All of these ingredients not only work well together, but also create a satiating sensation similar to that of consuming fat bombs.

Ingredients

For 6 servings you will need:

  • zucchini, 240 g;
  • chicken eggs, 3 pcs.;
  • almond flour, 150 g;
  • red onion, 50 g;
  • chopped garlic, 2.5 g;
  • feta, 110 g;
  • melted butter, 60 ml;
  • bunch of dill, 10 g;
  • salt and spices to taste.

Preparation

  1. I remove the thick peel and large seeds from the zucchini and grate it on a coarse grater, adding salt. To remove excess moisture, place the zucchini in a colander set over a bowl for liquid. Using my hands or gauze, I crush the grated vegetable to remove any remaining juice.
  2. In a separate bowl, beat the eggs vigorously.
  3. Mix the zucchini with all the ingredients, adding the egg mixture last. I first mash the feta cheese with a fork.
  4. If you need to thicken the dough, I recommend adding almond flour.
  5. To prepare, you will need a frying pan with melted butter. Fry the pancakes, spooning them out on each side.
