Apple season without charlotte is indecent. Therefore, today there are six recipes for this famous pie in the PP version. All recipes are suitable for baking the pie both in the oven and in a slow cooker. But, of course, in my opinion, the tastiest charlotte comes from the oven.

It is best to use apples for charlotte that are dense, sour and thin-skinned. The most suitable varieties are sour “Antonovka” or “Simirenko”. It is better not to peel the fruits, but to use them with the peel, as this provides additional fiber, which means additional benefits. Always check the readiness of the charlotte with a toothpick. Inserted into the middle of the cake, it should come out dry and clean.

Charlotte with apples on thin curd dough in the oven

Beautiful, appetizing charlotte with a lot of apples on a thin curd dough. The dough is soft, tender, with a pronounced cottage cheese taste. The main thing is that the pie is not very high in calories, which is very important for those who are watching their figure. Calorie content of a serving weighing 150 g is 226 kcal.

Ingredients for a 22 cm pan:

  • Apples – 3 pcs.
  • Chicken eggs – 5 pcs.
  • Cottage cheese 5% – 200 g.
  • Corn flour – 1.5 tbsp. l.
  • Rice flour – 1.5 tbsp. l.
  • Sah. deputy (“FitParad”) – 1 tsp.
  • Baking powder – 1 tsp.
  • Vanillin – 2 g.

Preparation:

  1. Grind the crumbly cottage cheese through a sieve. Thanks to this procedure, the dough will be tender and there will be no large grains in it.
  2. Beat eggs into a mixing bowl. Add sugar or a substitute, I use FitParad No. 10. A pinch of salt so that the dough does not turn out bland. Beat everything with a mixer until fluffy foam.
  3. Separately combine the dry ingredients: rice flour, corn flour, baking powder and vanillin. Corn flour gives baked goods a beautiful yellow color, but you can add just rice flour or any other flour of your choice.
  4. Next, add the beaten eggs to the cottage cheese. Stir and add flour in several additions. The finished dough should be quite thick, without lumps.
  5. Place the curd dough in the mold, cover the bottom and sides with parchment paper.
  6. We quickly chop the apples last so that they do not have time to darken. Cut into four parts, remove the middle, cut into thin slices. Next, place the slices beautifully at an angle on the dough, pushing them down a little.
  7. Place the mold in the oven, preheated to 170 degrees, bake for about 40 minutes. Check the readiness of the pie with a toothpick. When the cake has cooled a little, remove from the pan.

Recipe No. 2 Cottage cheese casserole with apples, as an alternative to charlotte

“Charlotte” dough is usually made from flour. But there is a good replacement for it - cottage cheese.

To prepare you will need:

  • 5 apples;
  • 100 ml orange juice;
  • 2 tbsp sugar;
  • cinnamon;
  • 300 gr. cottage cheese;
  • 1/2 cup milk;
  • 4 eggs.
  1. Core any 5 apples and cut into thin slices.
  2. 100 ml of orange juice + 1 tablespoon of sugar - bring to a boil, pour apples into this mixture and boil a little until the apples are soft.
  3. Divide the apples into 2 parts - add cinnamon to one and boil for 4-5 minutes, just set aside the other half.
  4. Prepare the dough - mix 300 grams of cottage cheese, half a glass of milk, 2 eggs, 2 whites and 1 tablespoon of sugar.
  5. Simply lay out the set aside apples along with the juice released during boiling in a greased form and fill them with dough - this should take no more than 2/3 of the volume in height (there will be a good rise during baking).
  6. Baking lasts 30-35 minutes in the oven preheated to t=180°C.
  7. The charlotte is ready if the match taken out of the dough is dry. Be sure to cool the charlotte and then remove it from the mold - it’s time to place the second half of the apples with cinnamon on the cooled pastry.

Dietary apple charlotte without flour with yogurt

A delicious dietary version of charlotte with juicy baked apples inside and a delicious cinnamon aroma. The pie is easy to make and fits perfectly into your PP diet. If desired, oatmeal can be ground in a blender or replaced with gluten-free flour with seeds. If you are watching your figure, be sure to try it.

Ingredients:

  • Apples – 5–6 pcs.
  • Yogurt – 450 ml.
  • Egg – 1 pc.
  • Semolina – 4 tbsp. l.
  • Oatmeal – 4 tbsp. l.
  • Baking powder – 1 tsp.
  • Vanillin – 1 package.
  • Stevia – 1 tsp.
  • Cinnamon.

Preparation:

  1. First let's make the dough. Add semolina and oatmeal to a deep bowl. Pour liquid yogurt into the mixture and mix everything thoroughly.
  2. Now add the egg, baking powder, vanillin and natural stevia. Thoroughly mix the contents of the bowl again until smooth. Set the mixture aside for 25–30 minutes.
  3. In the meantime, let's get to the main ingredient. Wash the apples, peel them, cut them into cubes. If you want, for example, you can make compote from the peel.
  4. Place the chopped apples on the bottom of the silicone mold. At this stage, you can also add raisins, prunes, dried apricots or other dried fruits. Pour the dough evenly on top. Sprinkle with crushed nuts, I used pistachios.
  5. Place the pan in the oven, preheated to 180 degrees, for 30–35 minutes.

Healthy apple charlotte with whole grain flour

Very tender, airy charlotte with a light aroma of cinnamon. Whole wheat flour adds a special taste and aroma. The recipe is designed for a mold with a diameter of 18 cm; for larger ones, recalculate. If you want to completely replace sugar with sugar. deputy or syrup, it is better to separate the yolks from the whites. Beat the whites with a pinch of salt until stiff, and the yolks with a sweetener. Then carefully combine both masses. Treat your loved ones with a healthy treat.

Ingredients:

  • Apples – 3 pcs.
  • Whole grain flour – 100 g.
  • Baking powder – 1 tsp.
  • Cinnamon – ½ tsp.
  • Sugar – 100 g.
  • Salt.

Preparation:

  1. We cut the apples into quarters, remove the middle, and cut them into thin slices.
  2. Let's do the test. Add a pinch of salt, sugar or any natural substitute to eggs at room temperature. Using a mixer, beat the mixture until fluffy, like a sponge cake.
  3. Add dry ingredients to the beaten eggs in several stages. Mix everything carefully using a spatula or whisk. There is no need to knead for too long, otherwise the dough may settle.
  4. Next, add the chopped apples and mix gently with a spatula.
  5. Grease the mold with vegetable oil and sprinkle with flour. Carefully place the prepared dough into the mold and spread it into an even layer.
  6. Bake in an oven preheated to 170 degrees for 35 minutes, “top/bottom” mode without convection. The charlotte should be covered with a golden brown crust. After baking, let cool for 10-15 minutes and then place on a serving plate.

How to make “Charlotte without sugar”

1. First of all, turn on the oven, let it warm up to 180-190 degrees. Peel and core the apples.

2. Cut them into very small pieces. If you wish, you can pour some lemon juice on it, so we can preserve their color while I wait in the wings.

3. To prepare the dough, beat the eggs with a pinch of salt in a deep bowl. Add sifted flour, cinnamon, vanilla extract. Pour in liquid honey or add another sweetener to taste. Beat the dough until it is airy and homogeneous.

4. Grease a heat-resistant pan with butter or line it with parchment. Place apples on the bottom.

5. Pour the dough into them in a thin stream so that it evenly covers the apples.

6. Now the form can be sent to the oven. The charlotte is baked for 55-60 minutes until golden brown.

7. Cool the finished pie in the pan (10 minutes), and then transfer to a wire rack. Cut into portions. You can serve it to the table. If you wish, you can sprinkle powdered sugar, cocoa or cinnamon on top, for example. Enjoy your tea!

Charlotte, consisting of two types of dough - one main, and the second curd, which will be on top. Everyone should try this type of baking, especially if you want something original. If you want the pie to be even more tasty and healthy, use more types of flour and bran. In fact, by changing the combination of these products, you will get a new, unusual taste each time.

Ingredients:

  • Apples – 2 pcs.
  • Vegetable oil.

Dough for the base:

  • Eggs – 4 pcs.
  • Stevia – ½ tbsp. l.
  • Oatmeal – 1 tbsp.
  • Bran – ½ tbsp.
  • Dried apricots – 100 g.
  • Baking powder – 15 g.
  • Kefir – 1.5 tbsp.

Curd dough:

  • Whole grain flour – 3 tbsp. l.
  • Cottage cheese – 300 g.
  • Eggs – 2 pcs.
  • Baking powder – 15 g.
  • Stevia – ½ tsp.
  • Kefir – ½ tbsp.

Preparation:

  1. First of all, pour boiling water over dried apricots (or other dried fruits) so that they swell and become softer. Then we cut the already softened dried apricots into any shape.
  2. Let's prepare the dough for the base. In a container, whisk the eggs and powdered stevia. Add the rest of the ingredients; first oatmeal, then bran, chopped dried apricots, baking powder and kefir up to 5% fat. Mix everything thoroughly.
  3. Peel sweet and sour apples from seeds and cut into thin slices. Next, place the slices on a plate and sprinkle with lemon juice to prevent them from darkening.
  4. Now let's make the curd dough. Add cottage cheese up to 5% fat and eggs to a mixing bowl. Grind everything thoroughly with a fork so that no large grains remain. Then add stevia, whole grain flour, kefir and baking powder.
  5. Grease the multicooker pan with olive oil. Lay out the main dough, distribute it evenly, pour the curd on top. Next, decoratively distribute the chopped apples.
  6. Place the mold in the multicooker, select the “Charlotte” mode, 120 degrees, 60 minutes. Once the cake has cooled slightly, it will pull away from the edges and can be easily removed from the pan.

PP-charlotte with apples and oranges on rice flour

The combination of apple, orange and cinnamon aromas is something incredible. It is advisable to serve the pie warm and delicious with a glass of cold milk. The dough turns out sandy, crumbly, crispy. In general, it’s tasty and healthy, because everything is prepared without adding sugar or wheat flour.

Ingredients for a 16 cm mold:

  • Apples – 2 pcs.
  • Orange – 1 pc.
  • Rice flour – 100 g.
  • Oatmeal – 100 g.
  • Baking powder – 1 tsp.
  • Honey – 2 tbsp. l.
  • Eggs – 3 pcs.
  • Ground cinnamon – 1 tsp.
  • Coconut oil – 60 g.
  • Salt.

Preparation:

  1. For the dough, sift flour and baking powder. Add oatmeal (long cooking), cinnamon and a pinch of salt. Mix.
  2. In a separate bowl, combine soft coconut oil or butter and honey. Mix well using a mixer. Then add the eggs and mix everything again.
  3. Add the prepared dry mass into the egg mixture in two additions.
  4. Wash the orange and remove the zest using a fine grater. We also wash the apples and cut them into small cubes. Next, add the orange zest and juice of half an orange to the apples.
  5. Combine apples and dough and place in a greased pan. Distribute everything evenly.
  6. Place in an oven preheated to 180 degrees for 40–50 minutes until deep golden brown.

Classic charlotte with rice flour

Rice charlotte for dietary nutrition can be baked according to the classic recipe. For this you will need:

  • 3 chicken eggs;
  • 4 apples;
  • 100 g rice flour;
  • 10 g sugar or its substitute;
  • ½ tsp. baking powder;
  • 1 tsp ground cinnamon;
  • ½ tsp. nutmeg.

Raw eggs should be thoroughly beaten. When the mass reaches thickness, add sugar, baking powder (it can be replaced with ¼ tsp of soda, quenched with the same amount of citric or acetic acid) and flour in small portions. The mixture is carefully brought to homogeneity. The consistency of the dough should resemble sour cream.

For charlotte, choose sweet and sour apples with green skin. They must be hard, because... Only such fruits do not fall apart during heat treatment. The apples are cored and the peel can be removed. Fruits are cut into slices or cubes. Some of them are placed in a form greased with vegetable oil. Apples are covered with spices and filled with half the volume of dough. After this, add the remaining fruits, spices and top up the dough.

The oven is heated to +140°C, place the pie in it and gradually increase the temperature in the oven to +180°C. This will allow the biscuit to bake more evenly. The baking time for charlotte is about 40 minutes. The readiness of the dessert is determined by dipping a wooden skewer into the browned sponge cake - there should be no traces of dough left on it. The pie is removed from the oven after cooling so that it does not lose its shape.

Sometimes recipes suggest mixing wheat flour with rice flour. In such cases, the dessert becomes more nutritious, but loses some dietary properties.

One way to make charlotte with apples requires the following ingredients:

  • 3 apples;
  • 4 raw eggs;
  • 50 g wheat flour;
  • 150 g rice;
  • 130 g sugar;
  • 10 g vanillin;
  • 1 tsp baking powder.

Beat eggs with sugar and vanilla. Sifted rice and wheat flour are mixed with baking powder. Peeled and seeded fruits are cut into thin slices. Flour is added to the egg-sugar mixture and the mixture is brought to the consistency of sour cream. The ingredients are placed in a mold greased with refined sunflower oil and placed in a preheated oven. The dessert is baked for 40-45 minutes.

Charlotte with apples without flour and bran sugar

A lush, low-calorie bran charlotte that you can eat in the morning, during the day, and at night and not gain weight. This dish makes the intestines work better and cleanses the body. The pie is perfectly stored, does not lose its taste the next day, remains just as airy and does not become stale.

Ingredients:

  • Wheat bran – 2 tbsp. l.
  • Oat bran – 3 tbsp. l.
  • Fiber – 1 tbsp. l.
  • Corn starch – 2 tbsp. l.
  • Chicken eggs – 2 pcs.
  • Fruit syrup.
  • Water – 180 ml.
  • Apples – 2 pcs.
  • Cinnamon – 1 tsp.

Preparation:

  1. Mix the dry ingredients: bran, starch and fiber, I used flaxseed.
  2. Separate the yolks from the whites. Add the yolks to the dry mixture. Add fruit syrup or any other sweetener. Gradually add water, maybe milk, and stir. The consistency of the mixture should be like thick sour cream.
  3. Add a pinch of salt to the whites and beat with a mixer until stiff peaks form.
  4. Next, add the whipped whites to the mixture with bran. Gently mix with a spatula using bottom-up movements.
  5. Grease the mold with vegetable oil; if you have silicone, you don’t have to grease it. Pour the dough into the mold and smooth it out a little. We lay out the apples, cut into thin slices, in the form of a flower, gradually moving towards the center. Sprinkle ground cinnamon on top if desired.
  6. Preheat the oven. Bake for 30–35 minutes at 170 degrees.
