Calorie cream for cakes
The creams that are used to lubricate, soak and decorate cakes are different. They are the main reason for the high calorie content of cakes.
, since they contain the most sugars and fats.
Custard is made from eggs, sugar and milk and “weighs” 212 kcal per 100 g. Butter cream is made from heavy cream and sugar, its calorie content is 226 kcal per 100 g. The most dietary is curd cream, which contains cottage cheese and sugar and cream, its calorie content is 167 kcal per 100 g. The calorie content of protein cream depends on how much sugar is added to it, and can vary from 160 to 250 kcal per 100 g. Sour cream contains 226 kcal per 100 g, it is made from sour cream and sugar. Buttercream has the highest calorie content - it can reach 450 kcal per 100 g.
The relationship between the calorie content of the cream and the components included in its composition
Despite the fact that in the process of preparing almost any cream, three main components are used (sugar, cream, butter), in addition to them, others can be added, of which there are more than a dozen.
That is why the calorie content of protein cream, curd, butter, custard and the calorie content of creme brulee differ significantly from each other.
Creme brulee has the highest calorie content; per 100 grams it is about 300 kilocalories. At the same time, a small amount of protein included in this cream prevents the process of building muscle mass. This is why experts do not recommend including creme brulee in a weight loss diet.
It is recommended to use this confectionery cream if there is a lack of animal fats, proteins, vitamins, carbohydrates in the body and with low nutrition.
Due to its high calorie content, creme brulee is contraindicated for diabetes mellitus, as well as diseases of the liver, stomach, pancreas and biliary tract.
Custard, which has about 212 calories, is most often used to fill eclairs or straws. In many countries, this cream is the base cream and other types of confectionery creams are made on its basis. The composition of the custard includes such components as chicken eggs, sugar and heavy cream; in addition, vanilla, rum and ground nuts can be added.
Despite the fact that custard has a lower calorie content than many others, it is very difficult to call it dietary, since 56% of its energy value comes from fats.
Of course, many components of this cream bring benefits to the body, but a very small amount is enough, which cannot be said about the proportions in which they are included in the custard.
Lemon custard, which has about 178 calories, is a little safer for your figure. But despite the fact that it contains lemon juice, its amount is not enough to completely protect the fat and calorie content of the cream.
The calorie content of protein cream is not much higher than that of custard, it is about 218 kilocalories, of which 71% comes from carbohydrates. This can be explained by the composition of the cream, which includes egg whites (chilled), citric acid and powdered sugar.
If butter is added, the calorie content of the protein cream increases significantly, thereby increasing the proportion of fats, and accordingly the load on the liver.
The least harmful in composition and calorie content is curd cream; its energy value is about 167 kilocalories. To prepare this cream, cottage cheese, cream and sugar are used.
Unlike other types of confectionery creams, the low calorie content of curd cream is combined with an insignificant percentage of fat content (up to 23%), which in turn, undoubtedly, depends on these indicators in the cream and cottage cheese used for its preparation.
The benefit of this cream is that it completely preserves all the valuable properties of cottage cheese, which in turn has a beneficial effect on muscle mass, teeth, bones, digestion and metabolic processes.
Curd cream, which is quite low in calories, can be used in their diet by those who carefully monitor their weight. At the same time, despite the fact that this dessert is not too harmful to the body, for dietary reasons it should be consumed in the first half of the day.
Calorie content of "Napoleon"
Layered Napoleon cake, smeared with delicate custard, is loved by many people. The caloric content of "Napoleon", in contrast to the caloric content of "Bird's milk", is only 250 kcal per 100 g.
Puff pastry contains very few calories, but the bulk of Napoleon's calorie content comes from the cream.
This cake is very tender and airy, but, unfortunately, those cakes that are sold in stores may not be entirely fresh, and may also differ in recipe and, therefore, calorie content. Napoleon cake, made industrially from not the highest quality and natural products, can contain up to 420 kcal per 100 g.
Buttercream Cake: 491 Homemade Delicious Recipes
Most butter cake recipes feature a delicate base layer soaked in whipped cream. Recently, cakes like cheesecakes, in which the crust is made in the form of a thin flat cake, and most of the dessert is given over to a creamy filling, have become in demand among Russians. Here you can find recipes for all types of butter cake.
The five most commonly used ingredients in butter cake recipes are:
Product | Calories kcal per 100g | Proteins g per 100g | Fats g per 100g | Carbohydrates g per 100g |
Sugar | 398 | 0 | 0 | 99.7 |
Butter | 734 | 0.5 | 82.5 | 0.8 |
Cream | 300 | 2.8 | 20 | 3.6 |
Flour | 325 | 12 | 1 | 67 |
Eggs | 157 | 12.7 | 10.9 | 0.7 |
If you plan to cook this for the first time in your life, it is better to stick to a sponge cake with butter cream. It is prepared quite simply and does not require any special confectionery skills. The most difficult thing is to bake a decent airy sponge cake that will bake well and not collapse at the end. But if you go to the appropriate section on the website and find the desired biscuit recipe, then there should be no problems with this either. After all, you can buy ready-made sponge cakes in the store.
The second most difficult task is actually whipping the cream itself correctly so that it does not curdle, does not remain liquid, but turns into a fluffy, amazingly tender mass that holds its shape well even outside the refrigerator. To do this, you can use special thickeners, which are sold in confectionery departments. Or do this.
Before whipping the cream (and it must be fat, at least 35 percent), it must be cooled. The container in which they will be beaten must also be cold. If during the process you begin to realize that something is going wrong, you need to place the container with cream in a bowl filled with cold water or ice. And continue whisking. Nothing other than powdered sugar can be added to the mixture as a sweetener. Especially the first time.
Five fastest butter cake recipes:
Name of the dish | Cooking time | Calories kcal per 100g | User rating |
Marshmallow cake with strawberries without baking | 10 min | 255 | +15 |
Quick chocolate waffle cake | 15 minutes | 375 | +103 |
Tiramisu without mascarpone | 20 minutes | 253 | +90 |
Homemade ice cream cake | 25 min | 286 | +56 |
Tiramisu without eggs with mascarpone in a hurry | 30 min | 337 | +231 |
It is important to keep in mind that even high-fat cream does not always whip well. This is influenced by many factors: the freshness of the product, its quality and composition (powder, concentrated or homemade). You can play it safe and buy special cream intended for whipping - there are definitely no surprises with them.
After coating the cake layers with buttercream, the cake should be allowed to stand for a while at room temperature and then put in the refrigerator. It has been noticed that if you do not use thickeners, homemade butter cream begins to “float” and melt quite quickly - if it is not stored at low temperatures. To become more delicious, any cake should be left to steep for at least several hours (it’s more convenient to refrigerate it overnight).
You can not only soak the cakes with buttercream, but also decorate the surface of the cake. If it is prepared correctly, it will hold its shape. It can also be colored with food coloring and passed through a piping bag/syringe. In addition to powdered sugar and thickener, you can add gelatin, curd cheese, whipped egg whites, and so on to the cream itself. You can beat with anything, from a mixer to your hands. A blender with a special attachment in the form of a thin whisk will be the ideal solution. It has been noticed that you should not whip a lot of cream at once - it is better to start with 100-200 ml.
How to reduce the calorie content of cakes

If you choose a large cake, then it is difficult to allocate such a portion in it that it contains no more than 300 kcal. In this case, it is better to do it as little as possible. Many stores sell weighted treats. The lowest calorie cake is considered to be cottage cheese; it contains 230-290 kcal per 100 grams. In yogurt - 250-300 kcal, in meringue - 285 kcal. It is better to consume the confectionery product on its own, and not during lunch or dinner. It is best to do this between 16 and 18 hours, since during this period the metabolism is very active, so the delicacy eaten will not affect the figure.
