Meanwhile, pass the chicken breast (for convenience, cut it into small pieces) and a peeled medium-sized onion through a meat grinder. Add minced chicken with onions to oatmeal.

Next, we clean and pass a large clove of garlic through a press (you can grate it on a fine grater or chop it with a knife). Salt (we don’t eat highly salted food, so half a teaspoon is enough for our family) and pepper to taste. If you like, use chopped herbs.

We transfer the minced meat into a bag, tie it and beat off the contents. This means we just throw the bag of minced meat on the table 50-100 times (not too much so that the bag doesn’t tear). This will make the already tender chicken breast even more tender. In addition, in this way the minced meat will mix even better, at the same time it will become compacted and will be easier to work with. A similar technique, by the way, can be used for any minced meat.

Form round or oblong cutlets. I got 11 pieces that were quite large. Since any minced chicken is quite sticky, we wet our hands with water when shaping. I don’t like to bread these cutlets, although you can use your choice of breading (the same breadcrumbs). Heat the vegetable oil in a frying pan and fry the pieces over medium heat - on one side for about 5 minutes, no more.

Turn the chicken cutlets over and finish cooking the second side, covering the pan with a lid. Prepare the second batch of cutlets in the same way. It is important not to dry out these cutlets, as they contain tender and capricious chicken breast.

Add bread lightly squeezed from milk. Then the onion is peeled and chopped through a meat grinder. Be sure to add salt and pepper to taste. If the minced meat is too thick, you can add a little more milk, which contained the bread.

Knead the cutlet mass thoroughly and pass it through your fingers. Then we hit the table with force several times - this will give the minced meat a uniform structure.
