Baking with cottage cheese is often accompanied by semolina. For example, I don’t always like this combination. That’s why I’m presenting my version of how to make cheesecakes without semolina. Be sure to try it!

Cottage cheese varies in composition. For example, grains do not contain purine, so the product is best absorbed by the body. It is ideal for both young and old people. Granular cottage cheese prevents many diseases and does not destroy joints. And casein protein is very useful for people involved in sports.

Diet cheesecakes without flour and semolina should be made from cottage cheese with a fat content of no more than 10%. At a higher percentage, there will be nowhere for the serum to be absorbed. Therefore, ideally low-fat cottage cheese is selected. It should have a uniform consistency. The product with lumps and graininess is thoroughly kneaded with a fork.

Cheesecakes without flour and without semolina: ingredients for dough and sauce

For cheesecakes you will need:

  • 800 g cottage cheese;
  • vanilla on the tip of a knife (more is possible, to taste);
  • two eggs;
  • vegetable oil;
  • breadcrumbs.

For the sauce you will need 4 tablespoons of 15% sour cream. Same amount of cream. Berries can be taken fresh or frozen. And three tablespoons of granulated sugar. If cheesecakes are prepared with bran or corn starch, then they are also added to the list of ingredients.

If you want to prepare the perfect breakfast, dinner or light cottage cheese dessert, then be sure to use miniature baking molds. Nowadays, they can be purchased in any shape: in the form of hearts, cupcakes, flowers, funny animals, etc. You can fill the molds with cheesecake dough and bake an excellent dish in the oven! Ingredients:

  • Cottage cheese – 200 gr.
  • Sour cream (15-20% fat content) – 100 gr.
  • Semolina – 45 gr.
  • Chicken egg – 1-2 pcs.
  • Sugar – 2 tbsp. no slide.
  • Salt is on the tip of the knife.
  • Baking powder – 1 tsp.
  • Vanillin - to taste.
  • Butter – 30 gr.
  • Vegetable oil - for lubricating the molds.

Cooking process:

  1. To the cottage cheese, mashed through a sieve or well mashed with a fork, add eggs, sugar, salt, vanillin and mash the mass with a fork (you can mash it with a blender or mixer).
  2. Next, add softened butter, baking powder, semolina and sour cream to the mixture. Stir again until smooth and let the dough sit for about a quarter of an hour.
  3. Grease silicone or metal molds with vegetable oil, fill them two-thirds with dough and bake in an oven preheated to 200 °C. Baking time: 20-30 minutes depending on your oven. If necessary, the temperature can be reduced to 190-180 °C.
  4. Cool the finished cheesecakes a little in the open oven and serve.

How to cook cheesecakes without flour and semolina in a frying pan? The cottage cheese is poured into a container. If there is water in it, it is drained. Knead the cottage cheese with a fork. Eggs and vanilla are added to the container. Everything is mixed until smooth. If you use vanilla sugar, you will need one teaspoon. Breading is poured into a deep plate.

Then round balls are molded from the resulting curd mass and rolled in breadcrumbs. After this, the cheesecakes are given the desired shape. 1. Beat the cottage cheese with a blender. Mix it, semolina, egg and banana mashed with a fork until smooth.

2. Sprinkle a plate with flour and place hand-shaped cheesecakes on top of it.

  • 250 g low-fat cottage cheese;
  • 1.5 tbsp. l. oat bran;
  • three egg whites;
  • a bunch of fresh dill;
  • salt to taste;
  • vegetable oil for frying.

Method of preparation: oat bran is ground in a coffee grinder. If you don’t have this device in your house, then you can put whole bran in the dough. But one egg yolk is added. Then - cottage cheese and whipped egg whites. Everything is thoroughly mixed. Finely chop the dill and add it to the dough, then add salt to taste. Grease a frying pan generously with vegetable oil, and spoon the cheesecakes into it. Fry over low heat on both sides for approximately 4 minutes.

We prepare the most delicious cheesecakes from 1 kg of cottage cheese

Do you have a large family, or do you want to prepare a lot of cottage cheese at once? Then this recipe is for you. From one kilogram of cottage cheese you will cook up a delicious dish that you can enjoy more than once. The recipe specifies only flour, but you can use it half and half with semolina (150 g flour and 150 g semolina).

We will need:

  • cottage cheese - 1 kg;
  • eggs - 2-3 pcs.;
  • flour - 300 g;
  • sugar - 6 tablespoons;
  • oil for frying.

Preparation:

1. Mix cottage cheese, eggs, flour and sugar. If desired, you can also add dried fruits, vanillin, and coconut flakes.

If you have large eggs, then two will be enough.

2. Divide the dough into 4 parts. Each of which must be rolled into a sausage. Cut it into pieces 1 cm thick.

3. Fry them in oil in a frying pan on both sides.

Cheesecakes with starch

How to make delicious cheesecakes without using semolina? You can use cornstarch instead. To do this you will need:

  • one pack of low-fat cottage cheese;
  • 1.5 tbsp. l. corn starch;
  • one tablespoon of milk powder or cream;
  • 1 chicken egg;
  • 3 tbsp. l. granulated sugar;
  • vegetable oil for frying;
  • salt to taste (usually a pinch is enough).

Method of preparation: combine all the above ingredients, except vegetable oil, salt and eggs. Everything is thoroughly mixed. Then the resulting mass should infuse for 10 minutes. During this time, the egg is divided into yolk and white, which is thoroughly beaten with salt.

The resulting foam is added to the finished dough and gently mixed with it. The frying pan is greased with vegetable oil. Then spoon out the dough. Cheesecakes are fried over low heat. Approximately 7 minutes on both sides.

3. Wet clean hands in cold water and form a ball of dough with them, roll it in flour, pressing lightly. We try to make sure that all the rounds are the same.

4. Pour oil into a hot frying pan and fry the curds in it over medium heat under a covered lid. As soon as one side is browned, turn it over to the other.

Cheese pancakes (without flour or semolina) take a little longer to cook in the oven than in a frying pan. First, the dough is made according to one of the many existing recipes. Then the balls are rolled and given the desired shape. And lay out on a baking sheet greased with vegetable oil.

To prevent the cheesecakes from spreading, you can put them in the oven in small muffin tins. There is no need to sprinkle or lubricate. But this is necessary if the molds are made of ceramic or metal. Cheesecakes are baked in the oven for half an hour at a temperature of 180 degrees.
