Types of oat flour and production methods
Many derivative products lose some of the properties of the main ingredient. But this does not apply to oatmeal. It not only preserves all the benefits of the grain, but also improves its absorption by the body.
In some countries, even children know how to make oatmeal at home. For example, in England they cannot imagine a single type of baked goods without it; even the cheapest bread must add it.
Our fellow citizens mainly use it to prepare pancakes and cookies of the same name. Slightly less common on the tables are pancakes, pie, cheesecakes and bread. In fact, there are a lot of recipes, but more on them later. First you need to understand the types of flour. There are two of them - oatmeal and the classic finely ground version.
The name “tolokno” comes from the word “toloch”, “to grind”. Oat grains are sprouted, then soaked or steamed, dried, then lightly fried, peeled and crushed. Jelly and porridge are prepared from the resulting mass. For baking, flour from ground mature grains is used. At home you can use Hercules flakes. It is indispensable for preparing dietary products. Even its slight presence makes the finished dish softer and airier.
Oatmeal is more beneficial for the body, since due to its large consistency it contains more biologically active substances. But you should understand that its shelf life is much shorter.
How to prepare and store oatmeal
Making oatmeal is very simple. The most basic way is to grind oatmeal in a blender or coffee grinder. It is better to use whole grain cereals or unprocessed oats for grinding.
It takes longer to cook oatmeal, but the result is worth it. For this you will need natural grains. Before making oatmeal, they need to be soaked for several hours, or preferably overnight. Then steam and dry thoroughly. All that remains is to grind it with a masher, and the healthy flour is ready. Oatmeal produces a more pleasant taste if you fry the grain in a dry frying pan for a couple of minutes before grinding it.
Regardless of whether you prepared oatmeal yourself or bought ready-made, you need to know how to store it correctly. The product is valuable not only for people. All sorts of bugs and insects will happily feast on it, so be prepared to protect your wealth.
For storage, the most optimal are glass, hermetically sealed containers, which should be placed in a dry, dark place. So, before you make oatmeal, take care to prepare a place for storing it.
Oatmeal pancakes
Not every housewife manages to cook pancakes. Even experienced craftswomen have problems with this, let alone beginners. Oatmeal pancakes are a win-win option. They will definitely work out. Cook without thinking.
Ingredients:
- Oatmeal – 1 cup
- Wheat flour – ½ cup
- Water – 500-600 ml
- Egg - 3 pcs.
- Salt - a pinch
How to make oatmeal pancakes, recipe
The water must be heated to room temperature. Sift the flour, mix the two types used. It is necessary to sift the flour. Many people skip this point, but the quality of the finished dish largely depends on it.
In a separate bowl, beat the egg with salt. No need to add sugar. Oatmeal itself is slightly sweet, and as a rule, pancakes are served with honey, jam, or jam.
Pour water into the egg mixture in a small stream, add flour little by little and keep kneading. The dough will be quite thick. Don't be alarmed. Everything is as it should be. It should be left alone for 35-40 minutes. Just remember to cover it with a napkin or lid first. After the specified time, pour in the rest of the water and mix everything thoroughly.
Now you can bake pancakes from oatmeal. Heat the pan. It doesn’t hurt to grease the surface with lard or butter before the first pancake. Although, if the frying pan is non-stick, you can skip this point. The pancakes are very tender and soft, and they are slightly thicker than regular pancakes.
And if you add a little mineral water with gas during kneading to make the dough more liquid, you will end up with thinner and more holey oatmeal pancakes. You can serve them with jam, condensed milk or any other sauce or preserves.
Oatmeal pie in a slow cooker with apples
What is a pie without filling? Many housewives will say this and they will be right, because you really want the pie to be tasty and aromatic, with a delicious filling. Apples are just perfect as a filling.
Baking ingredients:
- kefir – 1 glass;
- oat flakes “Hercules” - 1 cup;
- sugar – 1 glass;
- premium flour - 1 cup;
- eggs – 3 pcs.;
- baking powder – 1 tbsp;
- cinnamon and vanillin - to taste;
- apples – 3 pcs.
How to make a healthy and tasty oatmeal pie in a slow cooker:
- First you need to soak the oatmeal. For this we need a bowl and a glass of kefir. Just first you need to wait for the kefir to heat up; you shouldn’t use it straight from the refrigerator.
- Pour a glass of instant oatmeal into room temperature kefir, stir, and leave for 15 minutes. Kefir can be used at any fat content; it is also allowed to replace this fermented milk product with yogurt (preferably homemade) or sour cream.
- In the meantime, while the flakes are softening, we will do another job - we need to beat the eggs with sugar. Beat the eggs with a mixer until thick and light foam.
- When whipping, you can immediately add ground cinnamon and vanilla sugar (or vanillin powder) to this mass.
- Carefully place the eggs beaten with sugar into a bowl with kefir and cereal and mix these components with a spoon.
- Sift the flour into a separate bowl, add a spoonful of baking powder and now, little by little, add the dry part of the dough into the bowl with the main ingredients. Take your time, add the dough little by little, mix and so on.
- The dough should be homogeneous, liquid, without lumps.
- Now the apples - they need to be washed, wiped dry, cut into 2 parts to cut out the core and then cut into thin slices. If the skin of the apples is dense, then it is necessary to peel it first.
- As for preparing the multicooker bowl, there will be nothing new here; traditionally and without fail, we grease the bowl with any oil (vegetable or butter), the second option is better. So take at least a small piece of soft butter to lubricate not only the bottom of the multicooker mold, but also to cover the walls of the bowl by 1/3.
- And now the fun begins: some housewives claim that you need to coat the bottom of the multicooker bowl with sugar and cinnamon, and then lay out the apple slices. After this you can pour out all the dough. But, as practice shows, when baking an oatmeal pie in a slow cooker, the following happens: apples without any protection (“pillows” of dough) begin to gradually melt, and as a result there is practically no filling in the pie. Therefore, we will do it a little differently. This will not affect the taste of oatmeal pie cooked in a slow cooker.
- First, place a few tablespoons of dough directly onto the buttered bottom of the mold to completely fill the space.
- Then you can sprinkle our dough with sugar mixed with cinnamon and place beautiful apple slices on top (we leave a little to decorate the top of the pie). A little secret, if you want the apples not to darken, you need to put them in a bowl, sprinkle with lemon juice, and mix.
- Pour the remaining batter on top of the apples, and place the remaining apples on top of the batter. We distribute them as we see fit, not necessarily figuratively.
- The oatmeal pie will be cooked in a multicooker with the lid closed, in the “Baking” mode, the time should be set to 60 minutes plus another 5 minutes. But that’s not all, after the signal sounds, you need to extend the time by another 5 minutes (but here we look at the pie itself and determine the degree of baking, because not all multicookers have the same power).
- If everything is satisfactory, then you need to turn off the device, open the multicooker lid and leave the cake to cool for 10 minutes.
- When the pie has cooled a little, you can transfer it to a plate; this is most conveniently done using a steamer basket.
- Wait for the oatmeal pie cooked in the slow cooker to cool. Then you can cut it into portioned pieces, crush each piece (or before cutting) with powdered sugar mixed with cinnamon.
This delicious, aromatic and very healthy pie can be served with your favorite drink. And each person has his own: some like strong tea, some like herbal tea, some prefer strong coffee, a cup of hot cocoa or, conversely, cold milk. Bon appetit!
