Raw food cake - a simple recipe

A very simple version of a delicious cake. In this recipe we will prepare a very tasty raw cream for the cake, which you can then use in any other recipes.

For the crust:

  • 300 grams of almonds. Can be replaced with any other nuts of your choice.
  • 2 tablespoons of honey. This amount will be enough and the cake will not be too cloying.
  • 6 dates. We take out the bone.
  • 2 tablespoons carob. This chocolate powder can be purchased at any vegan store.

Now grind the nuts and dates in a blender. Add the remaining ingredients to the resulting mass and get the dough for the cakes. It needs to be divided into two parts, since we will have two cake layers.

For cream:

  • 150 grams of dates. We take out the bones. Soak them in warm water for one hour. During this time they will swell and will be easier to beat.
  • 2 ripe bananas.

Beat dates and bananas in a blender and get a gorgeous cream.

Place one part of the dough in the mold and grease it with cream, then put the second part of the dough and grease it too. Place in the refrigerator for a couple of hours.

Raw food jam

Yulia: To get raw food jam, you need to grind dried fruits in a blender, previously soaked in warm water (dried apricots are best, because it is not very sweet, you need to soak them until they become completely soft) with a small amount of water.

Tatyana: How much water should I take?

Julia: The less water you take, the thicker the jam you will get. I like it when the consistency is like real jam, so it’s better to add water a little at a time and see how it turns out.

You can add a little honey (to taste), but it tastes good to me as is, and with honey it turns out too sweet.

In this way I prepare raw apricot jam from dried apricots, plum jam from dried prunes and fig jam from dried figs. It also works well from a mixture of figs and prunes.

Tatyana: Isn’t it possible to make raw food jam from dried fruits?

Julia: Of course! In the same way (by chopping any berries, or even better, mixtures of berries with honey) I prepare strawberry jam, currant jam and others.

It turns out very tasty if you grind the lemon along with the zest in a meat grinder (it won’t work in a blender) and then mix it with honey. This is my favorite - it's so sweet and sour, not cloying. And how many vitamins...

You can pour honey over berries directly on a branch (viburnum, rowan, currants, etc.) - it turns out not only tasty, but also very beautiful.

You can optionally add herbs and nuts to honey (linden, mint, thyme, any nuts), but after experimenting, I came to the conclusion that it is very tasty even without any herbs.

Raw carrot cake

Is it possible to make raw carrot cake? In minutes!

Let's prepare a simple raw food cake crust:

  • 220 grams of carrots. Grate on a fine grater. You can also replace it with carrot cake if you have a juicer.
  • 130 grams of dates. Be sure to remove the bones. Grind in a blender.
  • 120 grams of raw almonds. Soak in cold water overnight. In the morning, grind in a blender.

We combine all the ingredients and get an excellent vegan crust.

Now let's make the cream:

  • 220 grams of raw cashews. We also soak them in water overnight.
  • 90 grams of honey. Can be replaced with Jerusalem artichoke or agave syrup.
  • a little orange zest. Grate it.
  • 80 ml carrot juice. You can take regular juice if you don’t have fresh juice.
  • a little vanilla

We beat everything in a blender and get a vegan cream.

Place the dough into a mold with sides and fill with cream. Refrigerate for 3 hours!

Low Calorie Carrot Cake for PP

Ingredients:

  • Sprouted wheat – 1 cup.
  • Flaxseeds - 0.5 cups.
  • Sunflower seeds - 0.5 cups.
  • Carrot pulp – from 2 pieces.
  • Onion – 0.5 pieces.
  • Vegetable oil - 20 milliliters.

Cooking:

  • Grind the wheat and all the seeds in a blender.
  • Add carrot pulp to the mixture and mix thoroughly.
  • We grate the onion and also add it to the mass.
  • We form thin cakes from the finished dough, resembling pancakes in size. Dry them in a dehydrator on both sides at a temperature of 40 degrees, but no more. As a rule, drying takes an average of 5-6 hours.

Raw coconut cake

Do you like coconuts? Then this recipe is definitely for you!

For the crust:

  • 200 grams of walnuts. Be sure to pre-soak.
  • 3 tablespoons of coconut urbech. This is coconut meat ground into a paste.
  • 60 grams of dates. Remove the bones.
  • Grind everything in a blender. You should end up with a paste-like mass. We put it in the mold and put it in the refrigerator while we prepare the cream.
  • 4 ripe avocados. We clean it, take out the bones.
  • 60 ml coconut milk
  • 150 grams of Jerusalem artichoke syrup
  • 3 tablespoons coconut oil. We take cold pressed oil.
  • 50 ml lemon juice. You can also take lime juice.

Place everything in a blender and beat until creamy. We take out our cake, fill it with cream, smooth it out and put it in the freezer for 4 hours!

Cheesecake

This is an amazingly delicious delicacy. A mixture of berries and cashews gives the cake a light cottage cheese taste.

ARTICLES ON THE TOPIC:

Base: Peel 150 grams of dates and chop with 100 grams of walnuts. Add 2-3 tablespoons of lemon juice (or coconut milk) and 1 tablespoon of honey. Mix well.

Line a cheesecake pan with cling film. Place the resulting dough into the mold. Place in the refrigerator for now.

Next, prepare the layers for the cake. To do this, soak 300 grams of cashews overnight. And then grind it.

Bottom layer: puree half the cashews with 200 grams of strawberries in a blender.

Top layer: combine the remaining cashews with 3 tbsp. spoons of coconut milk and whisk vigorously until smooth. Look at the consistency. You may need to add milk or only need 2 tablespoons.

Let's start assembly. You need to place the bottom cake on the nut-date cake first, then the top cake. Decorate the cake with fresh strawberries and blueberries. Put it in the refrigerator. Real jam!

Strawberry Ice Cream Cake

Cake: 3 ripe bananas, 300 grams of frozen strawberries, 1-3 tablespoons of coconut oil (add as desired, but this will make the base creamy). You can replace the berries with those you like.

Place bananas, frozen berries and coconut oil in a blender. Beat until smooth. Place in the freezer and freeze until solid. Choose a silicone container for the cake or line it with cling film for easy removal.

Filling: 300 grams of cashews, 350 grams of pitted dates, peeled slices of 1 orange. Mix everything until smooth. Add 2 tablespoons of coconut oil and water (add a little at a time). The less water you use, the more tender it will be. Spread 2/3 of the portion onto the cooled crust. When it hardens, remove from the mold and spread the remaining cream over the edges of the cake. Place it in the freezer again and freeze. Store the ice cream cake in the freezer.

Chocolate pudding with coconut

Ideal for any special occasion. Every piece melts in your mouth. First, the chocolate shade of coconut reveals itself, and then the sourness of goji berries.

Cake: 1 cup walnuts, 1 cup soft dates, pitted.

Grind the walnuts into powder. Then add dates in batches until the texture is smooth. Place the finished mass in a container with a diameter of 18-20 cm and place in the refrigerator.

For pudding: 1 avocado, 2 tbsp. cocoa powder, butter and coconut milk. Add 1 tsp. a spoonful of vanilla and a little Himalayan salt, 1/4 cup nut milk (as needed). You can replace coconut milk with 2 tbsp. spoons of chopped dates. Combine everything in a food processor and spread evenly onto the cooled crust.

Coconut cream: 200-250 ml coconut milk, maple syrup to taste. Place the bowl of milk in the freezer for 5-10 minutes. The mass should thicken. Add maple syrup to the milk and beat with a mixer until foamy.

Now take the cake out of the refrigerator. Spread the coconut cream on top of the pudding in an even layer. And put it back in the refrigerator overnight. Serve with goji berries and coconut flakes.

Brownie with ice cream

Ice cream: 400 ml raw coconut milk, 1/4 cup raw cane sugar (or preferred sweetener, to taste), 1 banana. Mix all ingredients until smooth.

For the fruit filling, take any berries - fresh or frozen, about 2 cups. Place in pan and fill with ice cream. Place in the freezer for about 3 or 4 hours.

Cake: a third of a glass of walnuts and a glass of soaked oats. Can be replaced with soaked green buckwheat. Add 2/3 cup pitted dates, 2 tablespoons cocoa powder.

Place walnuts, oats and cocoa in a food processor. Grind everything well until they become flour. Add the rest of the ingredients to the blender and give it a good whirl. Take out the cooled ice cream and spread the mixture over the top (this will later become the base when you turn it over). In the meantime, put everything in the freezer for about an hour. Then carefully invert the cake onto a plate. Let it thaw a little before eating.

Classic candies

You must determine the quantity of ingredients yourself. So as you cook, try what you get. Separate the dates from the pits and soak them in water for 15 minutes. Grind any nuts in a blender. Dates also need to be ground. Add cinnamon. Mix nut flour and date paste. Make balls and roll them in coconut if desired. Place in the refrigerator for 3 hours. Voila!

Candies with almonds

Pour 50 grams of almonds with water. Leave for several hours. And then grind the almonds with a blender. Coconut oil 2 tbsp. spoons and one banana, mash well with a fork. Add almond flour and 50 grams of coconut. Mix well. For sweetness you can add agave syrup. Now you need to make balls, and put peeled almonds inside. Roll the candies in coconut, cocoa or sesame seeds. Refrigerate for about 3 hours or more.

Natural fondant

6 pitted dates, 80 grams almond butter, 75 grams pistachios (shelled), 75 grams white sesame seeds, 1 tablespoon organic coconut oil, 1 tsp. lime juice.

We cut the dates coarsely, and the pistachios need to be chopped into large crumbs. Mix dates and almond oil. Then add pistachios, sesame seeds, coconut oil and lime juice. Mix everything well. Roll into small balls and serve for dessert.

Carrot sweetness

85 grams of walnuts, 1 small grated carrot, 7 pitted dates, zest of 1 lemon, a little ground cinnamon and nutmeg, 1 tsp. maple syrup, 1 teaspoon of any fruit (goji berries, cherries or raisins), 2 tablespoons of coconut.

Using a blender, grind the walnuts into powder. Then we add everything else except the coconut. Mix everything at high speed until the ingredients are combined. Increase speed to form a smooth paste. Take a teaspoon of the mixture and start rolling it into a ball. Roll the ball in the coconut. Place the sweets in the freezer.

caramel apple

15-20 dates, 1/3 glass of water, 1 apple. Add 2 tablespoons each of raisins, coconut, and grated organic chocolate (optional). Soak the dates for about 20 minutes to soften them, and then remove the seeds. Then we put them in a blender, add water and everything else. We don't touch the apple. We cut it into slices into circles and spread it with the prepared mass.

Garnish with soft raisins, raw chocolate and coconut. Enjoy!

Banana Almond Sandwich

For this dessert you will need 1 large banana, 2 tablespoons of almond butter, 1 tablespoon each of tahini and natural honey (can be replaced with agave syrup). Mix almond oil with tahini and honey. Gently spread the sweet mixture onto a banana cut lengthwise. Garnish with coarsely chopped walnuts, raisins, flaked almonds or sesame seeds.
